Christmas Cookies

Every year, my husband's family does a year-end all-night board and card game fest, and there's usually a food theme. One of the things I'm expected to contribute each year are the cookies, because no matter what the theme (this year it's "comfort food"!), you gotta have cookies. I try to hit everybody's favorites and then also make a few new ones. And then this year is my first year to do Christmas cookies to give out, so ... basically, starting today, probably, I'm gonna be a cookie making fool. I haven't decided on a final list, but below I've listed some of the ones I plan to make (links to the recipes if they're online). These are all tried and true, good stuff.

Like I said, though, I'm still on the lookout for a few new ones. (I'd also like to find that magical, possibly mythical sugar cookie recipe that has a nice chewy texture, not cakey or fluffy at all.) So I thought maybe this would be a good place to share our favorite cookies. Because cookies.

Soft Ginger Cookies. I got this out of a church cookbook that I bought at a garage sale, I think. They're so good. I'll post or PM the recipe if anyone wants it.
Cranberry Hootycreeks. Make a great jar gift, but also, just as a cookie they're very good.
Salted Caramel Pretzel Chocolate Chip Cookies. A BIG favorite with people who like cookies with a lot of stuff in them. I don't crush the pretzels but rather break them into about half-inch pieces.
Oatmeal Scotchies. SO's favorite, but he doesn't get them very often at all.

Dang. I thought I had a bigger list than this. I'm gonna need more cookies.

"Cookies are rolled in crushed corn flakes and topped with a quarter of a maraschino cherry."


Original recipe makes 5 dozenChange Servings
  • 3/4 cup shortening
  • 1 cup white sugar
  • 2 eggs
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 1/4 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup dates, pitted and chopped
  • 1/3 cup maraschino cherries, chopped
  • 2 1/2 cups crushed cornflakes cereal
  • 10 maraschino cherries, quartered

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
  2. Cream the shortening with the sugar. Blend in the eggs, milk and vanilla.
  3. Sift together the flour, baking powder, baking soda and salt. Add the flour mixture to the creamed mixture and mix well. Stir in the chopped pecans, chopped dates and 1/3 cup maraschino cherries.
  4. Shape teaspoonful sized chunks of dough into balls. Roll each ball in the crushed corn flakes. Place balls on the prepared baking sheets and top each cookie with 1/4 maraschino cherry.
  5. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes. Let cool completely before storing in airtight containers.

I can't cook :( but I think I'll give those Outmeal Scotchies a try :) They look tasty and almost healthy :)

I really like prunes, actually. After a particularly unfortunate incident, I no longer allow myself to eat them straight out of the container without counting.
