Grew up in El Paso but only ate at Ponchos. Now I am very international, get Persian food from my ex and being in the Baha'i community. I am blessed enough to have a son in law from Ghana (goat soup anyone?). And I make Pierogi with my eyes closed thanks to my stepmother's Urkrainian grandmother Plus we have a huge Asian population in OKC. Our Asian Market is as big as a Super Walmart--thats where I get all my rice noodles (gluten free).
I really don't frequent the trucks because I am trying to stick to a pretty very low fat, gluten free vegan diet. Okay, my daughter calls me a pseudo vegan because I am not that strict but I try to be....because when I cheat I PAY! Gluten makes me itch and walk like a drunk person, fat makes my blood sugar skyrocket and meat makes my muscles tense. And we won't even get into the dietary restrictions of someone on Warfarin.
Basically I now eat for energy and to feel good notjust because it tastes good like I did when I was young and stupid. So food trucks...no not here, I'll just wait till I get to the food truck lot in the world to come--I'll bet there's a ton of them!
