Got a favorite way of cooking the fish?

I have so many ways. I love to cook. I love the tuna as sashimi, seared rare, encrusted in cumin seed, grilled with lemon pepper... It's hard to decide.

I cook so many different fish so many ways but I think my favorite is fresh steamed cod with broccoli rabe and red potatoes over a smattering olive oil and red wine vinegar lightly sprinkled with fresh cracked pepper.

Grilling fish can be tricky or very simple. The important thing is to have a very hot grill and not to over cook the fish. If it's over cooked, it doesn't matter what you put on it or how fresh it is.

For tuna, an easy way is just to brush it with olive oil, salt and pepper. Grill 1 or 2 minutes on each side depending on the thickness.

A really easy way is to marinate the tuna or striped bass in Italian dressing first and then grill.

You can also brush the fish with olive oil then coat it with a spice rub. I use any of the ones available that include lemon pepper, Asian, or southwest rubs for fish or poultry.
