Homemade Honey-Based Ketchup!


Ingredients:


6 oz can tomato paste

1/4 cup honey (or agave)

1/2 cup white vinegar

1/4 cup water

3/4 tsp salt

1/4 tsp onion powder

1/8 tsp garlic powder


Directions:


Combine all the ingredients in a medium saucepan over medium heat; whisk until smooth.


When it comes to a boil, reduce heat to low and simmer for 20 minutes, stirring often.


Remove from heat and cover until cool. Chill and store refrigerated in a covered container.

I missed this, sorry.

Brown up your ground beef (I actually used ground turkey). When it's browning, I also throw in the vegetables - bell peppers (I like different colors of them), some Anaheim pieces, some poblano pieces, onion.

While you're doing that, heat up a can of refritos. I like to pour a little salsa into it to give it some heft.

Start shredding your cheese. I use cheddar and/or pepperjack.

Spice up your meat sauce. I used cilantro, garlic, chili powder, cumin, crushed red pepper, and a Latin spice blend.

Take some big ol' tortilla wraps. Cut them into strips.

Take the sauce out of the skillet, but leave in a layer on the bottom.

Cover with tortilla strips.
Another lawyer of meat sauce.
Glop on a layer of those hot refritos.
A layer of cheese.
A layer of tortilla strips.
A layer of meat.
A layer of refritos.
A layer of cheese.

By now, my skillet is pretty full. Turn down the heat, cover, and let cook for a bit. When it's hot all the way through, it's ready.

No oven, no baking, and you use just one skillet on the stove. Well, if you heat up the refritos in the microwave. I like to multitask with the cooking, slicing, shredding, and microwaving, and I think it takes me 20-30 minutes from meat in the skillet to dishing out.

I threw this together circa 1990. It was an instant classic immediate favorite.


Edited to add: If you're shy with your spices, just grab a packet of taco or burrito mix off the shelf in the Latin section of the grocery store. You'll have pretty much the same effect. But if you use the taco/burrito mix, you've got to add water and then cook it down.

Low-Carb Bacon Wrapped Cream Cheese Jalapeno Bites


Ingredients:

24 – six inch pieces of bacon, uncooked

I use fat free cream cheese and turkey bacon on mine!! So delicious and great for low carbers. You can also cook them on the grill!

Overnight Oatmeal

INGREDIENTS

1 container (6 oz) greek yogurt, any flavor

1/4 cup uncooked old-fashioned or quick-cooking oats

1/4 cup fruit (see ideas below)


Instructions:

In container with tight-fitting cover, mix yogurt and uncooked oats. Stir in desired fruit.

Tonight for supper I threw together a quick veggie chili.
I sauteed onion, garlic and the last red bell pepper left from the garden in grapeseed oil.
I diced the last of the garden cherry tomatoes and added them next. Added some cayenne pepper, crushed red pepper, and a little sea salt. Simmered all this for about 10-15 minutes.
I had 2 cans of organic black beans and a can of kidney beans in the cupboard. Added those to the base and simmered on low for about 20 minutes. Needed to add a tish more salt and a dash of black pepper.
Turned off the heat and left it covered for about 30 minutes.
It's pretty good considering it was completely makeshift! =D
I have some organic blue tortilla chips, sour cream and queso cheese if anyone wants to jazz it up! ;-D

Ok, here's my recipes that I have prepared this weekend... (I do most of the cooking during the weekend, hubby covers weeknights.)

For Saturday night's dinner...

Stuffed Chicken Thighs
Boneless, skinless thighs. pound thin and trim off any extra fat. Season the outside (I used Jane's Crazy mixed up Salt). Turn over and place about 4 or 5 asparagus spears, then drizzle with a bit of EVOO (that's extra virgin olive oil if you are not a Rachel Ray fan). Season this side, then sprinkle a couple teaspoons of crumbled blue cheese. Roll up and wrap with a slice of bacon and pin together with toothpicks. We then grilled them until the bacon was crispy and the chicken was done. Yum!!

For Sunday football watchin'....

Potato Stew
Chop up a pound of bacon and cook until crisp in a large stew pot. Chop 1 med onion and 1 stalk of celery. Remove bacon when done and saute the onion and celery in the bacon grease until soft. Pour off all but about 2 teaspoons of the drippings, then add the bacon, 5 lbs. of peeled, chopped potatoes, 2.5 to 3 quarts of water, and 3 chicken bouillion cubes. Bring to a bowl, then reduce to low. Stir occasionally. After about 2 hours it should be nice and thick.

Today we are having this with a honey glazed ham on rolls. Purrr!!!

Easy Crock Pot Potato Soup

Ingredients:
1 30oz. bag of frozen diced hash browns
1 32 oz box of chicken broth
1 can of cream of chicken soup (10 oz)
1 pkg. cream cheese (8 oz, not fat free)
3 oz bacon bits
1 cup shredded cheddar cheese
salt and pepper to taste

Directions:
Put the potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper.
Cook on low for 8 hours or until potatoes are tender.
An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving.
Once the cream cheese is completely mixed in, it's ready to serve.
Top with cheddar cheese and some additional bacon bits.

I actually made something quite close to this by accident on Thursday.

I had chicken tenders... Browned them slightly. I knew I had a can of Cream of mushroom soup.
It went in all got all good and bubbly. Tasted... ah salty.

Found a potato. That is good for absorbing salt. Mixed that in.

It started to look pretty interesting. I started to look around in fridge. I spied some carrots that needed to go. I spied an onion. And then I saw some celery. Hells!

Mixed the whole deal together, and I wound up with a pot pie filling.!

It was tasty.

Excellent, but I did not have the pie crust part of the pot pie now.. (say that 3 times )


Made due with crackers

Then I froze it.. to freezer hell.

It should probably hook up with vegetable crisper doom.

Gruyère. Maybe 12 paper-thin slices in total for two sandwiches.
Butter.
Sturdy bread, a pugliese or sourdough.
A bunch of fresh thyme.
Beef bouillon powder into the caramelized onions.

Four slices of cheese on one piece of bread. Onions and then thyme, and two more thin slices of cheese on that. Second piece of bread on top. Thin smear of butter on outside of bread.

Grill in a non-stick skillet. Cover it for ideal cheese meltage.

That's your deconstructed French onion soup sandwich.
To be cut into long pieces and shared with a special someone on November 20, the day that Beaujolais nouveau arrives in liquor stores.

Homemade Laundry Soap for a year for LESS than $30.00!!!!


3 bars Fels Naptha, grated ($1.33 x 3)

1 box Borax ($5.85 - 76 ounces)

1 box Washing Soda ($4.07 - 55 ounces)

2 cups of baking soda ($0.53 cents)

2 containers of Dollar Tree Oxyclean (I bought mine at Family Dollar store…SUN Brand…$4.00 each)

1-2 containers of Purex fabric softener crystals ($6.97 - 28 ounces) Optional (adds great scent)


Use 2 tablespoons per load.


Put it right in the barrel if you have an HE washer.


To grate the bars of soap I decided to make it easier on myself and use my ancient Hamilton Beach food processor. I figured if it broke in the process it would give me a good excuse to get a new one! But fortunately (unfortunately?) it handled the soap just fine. I would offer one tip though if you decide to use your food processer to “grate” your soap: add something else to the bowl to aid in the process. I added a cup of the SUN Oxygen Bleach to each bar when I processed it. It seemed to help the blades do their job better. My only other tip for this recipe has to do with the “mixing”. Once you add everything, you have a LOT of ingredients to mix together. I decided to put it all in a kitchen garbage bag (doubled) and tumble it all together. Just tie it off tight and turn it over a handful of times and you’re good to go! Now you have a nicely integrated batch of laundry detergent that should last a family of four ONE YEAR!
I do homemade soap, too (only way to deal with a variety of skin sensitivities in this house), but much simpler.
Mine is: 2 bars of Fels-Naptha, grated
4 C Borax
4 C Washing soda
I mix it all together and then run it through a food processor to make sure the soap is mixed well with the powders. This just fills a coffee can and lasts me a 2/3 of months of doing laundry for 6 (our machine is running for at least a load or two 7 days a week). One thing people mentioned when we discussed this in another thread is that they tried it and thought their clothes started to look dingy after a while. I solved that by grating in a bar of Ivory soap in one batch of detergent. I only had to do it once, and it seemed to strip the remaining chemicals out of the clothes (or something), because I never had to do it again. I also never have to use fabric softener (that is a joy, as I was down to one type that didn't give SOMEONE the itches)--clothes come out clean, fresh smelling, and cling free. I think we created some of our laundry 'problems' for ourselves by all of the chemicals and petroleum based additives we added to commercial soaps.

I'm going to try this! French onion soup is a favorite of mine--The Man has a great recipe (when I met him, he was the soup and sauce chef at our local Hilton--lol).

Glad you started this. I'm going to make breakfast here in a minute and gather my thoughts and decide what to share. I'm so in the market for new dinner recipes, and though I love pinterest, you never know if someone's really tried it. I once followed the directions for making "Lovely Caramel Sauce" that said "boil for 20 mins". Well, you can't boil sugar for 20 minutes. It turns to fire. Word.

Anyhow, I wanted to bump this up for us.

Just about everything on my Pinterest, I've tried (you've probably noticed that's my 'memory' for recipes I see online--lol. I don't use it for much else). I sound like an ad, but I also get a lot of new ideas from All You magazine--they have a lot of affordable, do-able, healthy recipes that rarely use prepackaged stuff. Fresh ingredients!
