Somehow, when I was looking for the recipe for your image, a recipe for baked zucchini sticks appeared. I'm going to try them. They look tasty and they almost look healthy too! :) I've never cooked zucchini, should I peel the skin? would washing the skin be sufficient?

I don't know a lot about zucchini other than you can make a nice zucchini bread with chocolate chips.

Maybe try peeling the skin in stripes i.e. partially peel the zucchini so you end up with a bit of peel but it looks sort of like stripes (if you get what I mean?)
