I'll be having a big salad (aka, my Elaine Benes [Seinfeld] Big Salad) per my diet program, in an attempt to actually use some of the veggies I buy with such good intention. It's my "Lean 'N Green" meal for today, which translates to lots of veggies and 6-7oz lean meat. I'll probably fry some lean hamburger for it; which though not The Overlords' first lean choice at least they allow, Thank you everso.

Okay, I'm feeling good tonight.

We got home through tough traffic, after passing a Culver's that both of us thought looked good but didn't talk about until we'd passed. We get home, and Grandma is looking in the fridge, saying, "What do you want?" I said, "Pizza." She looked at me. "I was thinking the same thing!"

So I cranked up the oven, grabbed a couple wraps, spread some pasta (tomato-ish) sauce over them, grabbed leftover Easter ham and vegetables from the fridge, added some fresh spinach (artfully arranged), black olives, fresh mushroom slices, with garlic and lemon pepper, covered with grated cheese, and whaddya know, 15 minutes later, we both had low-ish carb personal pizzas that Grandma heartily approved. Also a nice shiraz-cab to go with them.

Win.

Mmm, I love peanut butter on celery. You put some raisins on it, and the kids called it "ants on a log." But not for supper.

I made some tilapia simmered in pineapple sauce and peach vodka, sprinkled with cilantro, garlic, and a blackening spice. They shared the skillet with some fresh vegetables. Served up with a chilled chardonnay. Grandma approved.

LilMan wanted to make a dinner out of his cookbook the other night, and made a fantastic tilapia: place a good sized fillet in the middle of a piece of foil. Put 3 or 4 thin slices of lemon (which ever will fit) on the fillet, a few slices of thinly sliced zucchini, and about 6 cherry or grape tomatoes, halved. Tuck in 3 small basil leaves amongst the vegetables, and sprinkle the whole thing with salt. Make to foil into a packet & cook in a 425 degree oven for 15-20 mins. Not kidding, it was some of the best tilapia I've ever eaten!
