Is that spaghetti made from squash (like in the Veggetini ads), or spaghetti squash? We love that, especially when done in the oven rather than the microwave--the texture is better from the oven :)
Yes to the oven-baked spaghetti squash! I pull it with a fork and toss it in heated plain ole Hunt's tomato sauce, along with a pat of butter, and then top it with some shredded Romano cheese. Quite tasty.

I went looking for this thread specifically to sing the praises of our dinner--lol. When mom was in the hospital, I watched a lot of TV with her. One of the shows was a Giada DeLaurentis show about 4 seasonal pastas. I made this one tonight, and it was INCREDIBLE:

I substituted broccoli for the peas (we didn't have any), and made my own parmesan cheesy béchamel (the fontina sauce looked too rich to me) to put on the top. I make my own ricotta, too (it's super easy). It was out of this world good, and came out of the oven looking EXACTLY like the picture--that rarely happens for me :) Will definitely be adding this to the regular rotation :)

FYI: Cheesy bechamel
2T butter
1/2 t salt

Melt together of med.heat, then add
2T flour (to make a roux)

Add 1/4-1/3 cup parmesan (depending on how cheesy you like your sauce)
whisk in 1C milk. Keep stirring until your sauce is as thick as you like (I like it to coat the back of a spoon).

Makes about a cup of cheese sauce.

This is a basic white sauce with parmesan. You can use whatever other cheese you like (cheddar usually takes more for a great flavour--maybe a half to 3/4 cup) to make a great mac & cheese sauce, too.

Chili night tonight. Ground turkey, three colors that aren't green of bell pepper, anaheim pepper, poblano, onion, mushrooms, black olives, black beans, tomatoes, salsa, Louisiana red sauce, and various spices. Melted cheese on top, and Grandma adds sour cream. We had a bottle of Parducci "sustainable red" to go with it, and it was quite yummy.

A few weeks ago, my daughter decided she wants to be a vegetarian.....
Tonight, She's having a Boca burger......and I'm having a nice bacon cheddar burger made from real meat!

Hey, just because she doesn't want to eat meat, doesn't mean that I have to give it up, too....:biggrin2:

Boca burgers are in the frozen organic section of our store. We buy them too. Not because we're vegetarian but when we want a lighter sandwich for lunch, typically on the weekends. It fits nicely between deli flats for bread. We get the "spicy chik'n" flavor, and I spice it up more.
