Came on this new recipe yesterday, might make it over the weekend:
4 chicken breasts
1 Packet Fiesta Ranch Dressing
1 15 oz can black beans, drained and rinsed
1 15 oz can corn, drained
1 15 oz can Rotel *not drained
1 8oz block cream cheese

Cook breasts in dressing, beans, corn and Rotel on low 4-5 hours. Shred the chicken breasts return to pot, add the cream cheese and just let it melt, about a half hour. Stir and serve on rice, put on a wrap however you want.

*Or use a 15oz jar of your favorite salsa
I've made this often. It is delicious. Sometimes, I'll even top it with shredded cheddar or pepper jack cheese and let it just melt before serving.

I made this yesterday. It was soooo delicious! :thumbs_up:

I had 6 chicken breasts, and they were very large. So I doubled everything except the cream cheese. I shredded the chicken at 4 hrs, 15 minutes, and even with them being large, I think that was just a tad bit long. Wasn't tough, but it wouldn't have taken much longer to get tough. So if you have smaller chicken breasts, might want to watch the cooking time.

I just turned my crock pot down to warm after shredding the chicken and let it be for the next hour. Topped it with cheese.

Everyone in the house loved it! Even my husband, who can be kind of picky.

And there are leftovers! Makes a lot. Yay!

Pot roast is good when you have the right veggies and spices. Onion soup mix does real well, with other things.

Pork or beef simmered all day in my special barbecue sauce, cooking in with onion and chili peppers is a real crowd-pleaser too.

Being a fairly literal guy, I must note that this is technically "slow cooker" stuff because our actual Crock-Pot® went to the big recycle center in the sky many years ago.

I make what is called a 3 packet roast in the slow cooker.
One package each of Italian dressing mix, one of ranch dressing mix and one of dry brown gravy mix. Mix altogether with a cup of water, pour over roast in pot. Cook on low 6-8 hours. What a sauce this makes!

I would share with you and Sunny in a second! Alas, remember those Hoovers I told you about? They finished it all up yesterday. It is all gone. :(

So the kiddos liked it then! That is cool, another thing to cook for them that is somewhat easy to make and they like!!

But, CAT? Next time use THE BIG crock pot so they'll be more leftovers.....:biggrin-new:;;D

I DID use the big one! I actually don't even have a little one. It was full. I thought, this will last a bit!

:no_pig: I was wrong.

All the kids loved it. I thought they would, it was hubby I thought maybe wouldn't. But he did, too. :)

You know what they say.......TWO big crock pots are better than one!!:D
:biggrin-new: I do have another large one, but it doesn't get used very often. It cooks meat great, but if it is a roast or something like that, and I add potatoes and carrots, the potatoes and carrots never cook. It is the weirdest thing!

It is going to be hard for me to figure out how to cook for just 2 people, when the kids are all grown.
