If that sounded pretentious, because possibly it was (although when nachos are a meal, that's how I do them), I'm perfectly happy with a plate of chips sprinkled and drizzled and covered with whatever - although I haven't had Cheese Whiz for a decade or so, so I'll hedge the bets on that one.

Shredded seasoned chicken or ground beef or ground turkey, each seasoned with chili powder, cumin, garlic, pepper, crushed red pepper, paprika, maybe cilantro, and probably a few speciality spices.

Chopped sauteed onions. Maybe some chopped bell pepper, orange or red, thrown in the skillet too. Along with either Anaheim or poblanos.

Black olives.

Refritos in scattered little glops.

Maybe jalapenos, maybe not. Depends on the crowd.

Stack chips and all that in layers. Grated cheese all over it. Our family is a dairy family. Cheese is at the top of the food pyramid in our gene pool.

Microwave till the cheese melts, and serve with salsa, sour cream, and my own guacamole, all on the side for dipping.

Scoops are nachos that look like a scoop. On my nachos, I want spicy mexican ground beef, hot peppers, green peppers, onions, tomatoes diced, black olives and cheddar cheese on top with a side of sour cream.

Corn chips, shredded cheddar, lots of diced onions, extra lots of jalapeno rings, sometimes doused in hot sauce (current favorite hot sauce is habanero tabasco).

I think I’m going to have nachos for lunch today. I can only tolerate a nacho discussion for so long before the need to break down and have some nachos.
