Hearts in Atlantis is the first title that comes to mind but I would have to look back through it to see if the actual explanation for the peace symbol was in that one. Another possibility would be the non-fiction book Hearts in Suspension. Might be neither of those but I'm sure someone else can weigh in. :)

I read a book by King that told the orgins of the peace symbol, cannot remember the title, please help!

At the end of Chapter 4 of the novella Hearts in Atlantis, Pete and his friends see a drawing that "looks like a sparrow-track" and he muses that "none of the three of us realized we had seen the peace sign for the first time" -- is that what you're looking for?

That's some great knowledge there, I don't think anyone knows Papa King's work better than you Marsha, you probably know more than Steve himself! :)

He talks about how he got sober in On Writing. It was an intervention by his family that got him into rehab and he's been a friend of Bill since.
He actually recounted his accident in On Writing, as though it was a story of his in prose, pretty horrible stuff, but glad he was able to get to the other end, there was an interview back in '98 where Steve said all he wants is another decade of writing, well, he's had a few now, here is to the third!
