Stewed Rhubarb

Ingredients

  • 6 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tablespoons water

Method

In large saucepan, combine rhubarb, sugar and water; cook over medium heat, stirring, until sugar has dissolved. Reduce heat to medium-low; simmer, uncovered and stirring occasionally, for about 15 minutes or until slightly thickened and rhubarb is in threads. Let cool. (Rhubarb can be refrigerated in airtight container for up to 5 days.)

strawberry rhubarb -- the devil's spunk.

Not sure about strawberry rhubarb but I love stewed rhubarb - it's good on toast

Not sure about strawberry rhubarb but I love stewed rhubarb - it's good on toast
Scott hates things that grow in the ground. He hardly eats any vegetables. Fruit once in a while, if it is peaches. But he LOVES rhubarb!

Moderator Have a wonderful time! 2 weeks with a 2 year old will be great fun!! Did i read somewhere that your grandson will be born during that time as well? I can't find it on this thread. I had a 2 year old and newborn 16 years ago- I remember how huge my little two year old suddenly seemed to me when his sister was born. I thought he was a little fellow - but I'd forgotten what little is. Oooooh babies!!!:love_heart:

Baby due Sept 4th- then MsMod will be taking additional vacation time.

I'll be staying in MA for the next month or so to be there when my daughter goes into labor as there's no family near them and for a couple weeks after delivery to help out. Only need to be there a week for the daycare coverage but it makes more sense to just stay in case my daughter goes early as it's a 4+ hour drive. I know what you mean about forgetting how little they look when they're newborns. My granddaughter was a little over 7 lbs but she seemed tiny.

I'll be staying in MA for the next month or so to be there when my daughter goes into labor as there's no family near them and for a couple weeks after delivery to help out. Only need to be there a week for the daycare coverage but it makes more sense to just stay in case my daughter goes early as it's a 4+ hour drive. I know what you mean about forgetting how little they look when they're newborns. My granddaughter was a little over 7 lbs but she seemed tiny.

My son was 9 pounds 2ounces when he was born. Dr. Smith didn't believe the nurse at first and actually had the nurse weigh him again because you could see every one of his ribs he was so skinny. Then they unfolded him, he was 23 inches long. The Doc said "Oh wow! Well congratulations Mr. Hill, you have a stick figure
baby"...lol

Then they unfolded him, he was 23 inches long. The Doc said "Oh wow! Well congratulations Mr. Hill, you have a stick figure
baby"...lol
LOL After I had my older daughter, the nurse came back into the delivery room with her eyes huge and asked if I knew how big she was. I suspected she was big but after delivering with no anesthesia and they'd had to turn her with forceps because she was coming out face up, I was just relieved she was out and healthy. Turns out she weighed 9 pounds 5 ounces and was 22-1/2" long. I think what may have added to the nurse's amazement was that I'm only 5'2" tall. The poor kid must have been squished up like a spring waiting to unload. :laugh:
