Glad you started this. I'm going to make breakfast here in a minute and gather my thoughts and decide what to share. I'm so in the market for new dinner recipes, and though I love pinterest, you never know if someone's really tried it. I once followed the directions for making "Lovely Caramel Sauce" that said "boil for 20 mins". Well, you can't boil sugar for 20 minutes. It turns to fire. Word.

Anyhow, I wanted to bump this up for us.

OH! Two things I shared while teachings my kids to cook:

Be careful with the seasonings. You can always add more but you can't take them out.

If you over salt...add a peeled potato. You might be able to save the dish.

Peace.
Adding instant potato flakes also helps with the over salting.

Italian Pork Chops?
Are you looking for a recipe for that? I would say brown the pork chops, then add some Italian dressing? or maybe you would like some tomato sauce and oregano perhaps? Sorry - can't say I actually have a recipe for that one

I have two or three large chicken legs that I cooked recently and now I am trying to find a good recipe for them. I have carrots, celery, onions so I was thinking maybe a nice pot of chicken soup.

You just take the meat off the bones, simmer the bones to get broth and then add chicken stock from a carton plus some spices, herbs and vegetables.
Now I am getting hungry!

If it's a liquid (soup, chili, whatever) with too much salt, a slightly microwaved potato cut in half (to reduce the density and increase the surface area) will, by the magic of osmosis, suck up a lot of extra sodium. Pull out the potato, et voila.

Potato flakes, however, diffuse too much...unless you are already making mashed spuds, then that's a good trick.

Ok, this is kind of from pinterest, but I added my own flavah.

Mexican Chicken Enchilada Rice

Cook rice : I use a rice cooker and I made a bunch, but I will use it later in the week. For this recipe you'll need 2 cups of cooked and cooled rice.

Ingredients:
3 nice size boneless, skinless chicken breasts, cut into cubes
1 small onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced (I used the jarred kind)
a little oil (I used canola because olive gets too smoky when I'm cooking chicken in it for some reason, but the recipe called for olive oil)

Sautee all of the above until chicken is browned and the onions are translucent.

Add the rice, along with
1 bag of frozen corn, thawed
1 can of black beans (I did not drain mine)
3/4 cup red enchilada sauce
1/2 cup green enchilada sauce
1/2 tsp chili powder
1/4 tsp cumin
Kosher salt & fresh ground black pepper to taste

Simmer together about 15-20 mins, pretty low though, mine started sticking so I added a little chicken broth

Add as much shredded Mexican blend cheese as you like. I love cheese, but not everyone in this house loves it as much as me. You can always add more.

The recipe called for cilantro (I don't like cilantro) and oregano (I didn't have any)

I have to say, it was a hit. 3 out of 4 people like it. The one who didn't is too picky and doesn't have good taste.

It was fast, easy and I had all the ingredients without having to go to the store.

This sounds like my kind of recipe - yum!

By the way, my chicken noodle soup turned out delicious today - good for what ails you! (Jewish penicillin).

My mom told me that olive oil should never be heated over a certain temp. Ever since then, I've used Grapeseed oil. =D
