Tonight I'm trying something different - took two pork steaks, trimmed all the fat off of them and rendered it down in a pan until it was crispy, then took the lean meat and the meat with bone attached and browned those well.

Poured off the fat, then put a sliced lemon on top of the chops along with thinly sliced fresh onion, lemon pepper and regular pepper.

First I scraped up all the brown bits from the pan using some chicken stock and also squirted a bit of lemon juice into the mix.

I cooked the meat in the pan, covered, in the oven for one and half hours at 225○ - now I'm just keeping it warm in the oven at 170 - I'm hoping if I cook it low and slow the meat will be nice and tender.

Will have that with some pasta on the side - garlic butter sauce.

Oh - and of course a nice salad as well.

If you can't decide just go for something reliable and easy and that's spaghetti bolognaise. I still can't make that dish better than my mother. She made it watery but it tasted nice. I actually feel like some boiled tripe with boiled potatoes and steamed brussel sprouts( I read that sprouts is supposed to be one of the best vegetables.), for the sauce I buy one of those packets, like French white sauce packets.

Breakfast for dinner. Going simple tonight because I made homemade cheeseburger mac last night. Several moving parts to that and I ended up with flaring feet and sore back. So I get to take it easy tonight :)
Breakfast for dinner is legitimately my favorite dinner. I grew up poor and my mom did breakfast for dinner pretty often since it is pretty darn cheap to make so you'd think I'd have negative associations with it or something but it is totally the opposite. Nom nom nom nom!

Have you ever tried a biscuits and gravy casserole? SO GOOD!

Tonight I am roasting red potatoes in their skins with some whole garlic cloves. Once the garlic is soft you can squish it right out of its casing.

But I have to leave - I need to go to H&R Block to get a copy of my most recent Notice of Assessment. There is so much paperwork involved once you retire. This is so I can put a pile of money they gave me into an RRSP to protect it from taxes :ambivalence::rolleyes:

I also made a nice gravy to go with the potatoes but I still haven't figured out what to have for "protein" - maybe I'll pop into the store while I'm out there.
