Tonight I tried to make a recipe for pork chops that called for apple butter. Could not find any for sale so I decided to make my own. Was good (sort of spicy with cloves, cinnamon and nutmeg)

You also slice onions very thin and saute those in the pan then add slices of Golden Delicious apples plus the apple butter mixed with yellow mustard, ground cumin and a tablespoon of apple cider vinegar.

It was pretty good (I thought) plus I took what was left of the apple butter and put it in a jar. I mixed a couple of tablespoons of apple jelly into it to tone it down a bit so it would be more like jam. It should be good on pancakes!

Doesn't anybody cook on here? (Or maybe you prefer to keep it to yourself?)

I have some boneless skinless chicken breasts to work with today and I'm going to have to find a good recipe - thought I might start early and put it in the slow cooker to simmer.

Thinking maybe a chicken stew with onions, carrots, garlic etc.

Indian Mulligatawny Soup

Get curried away with Greta’s scrumptious version of mulligatawny soup! Chicken, quinoa, veggies, warm spices and coconut milk make this hearty soup super-nutritious and super-flavourful.

1 tbsp butter or olive oil
1 cup each chopped celery, chopped onions and chopped carrots
1 tsp minced garlic
1 lb (454 g) boneless, skinless chicken breast, cubed
1 tbsp grated gingerroot
2 tsp curry powder
1 tsp chili powder
½ tsp ground cumin
3 whole cloves
4 cups reduced-sodium chicken broth
1 can (19 oz/540 mL) no-salt-added diced tomatoes, drained
½ cup uncooked quinoa or quick-cooking brown rice (not instant)
½ tsp each salt and freshly ground black pepper
1 large apple, peeled and diced
¾ cup light or regular coconut milk
3 tbsp chopped fresh cilantro


Melt butter in a large soup pot over medium heat. Add celery, onions, carrots and garlic. Cook and stir for 3 to 4 minutes, until vegetables begin to soften.
Add chicken. Cook until chicken is no longer pink. Add gingerroot, curry powder, chili powder, cumin and cloves. Cook and stir for 1 more minute. Add broth, tomatoes, quinoa, salt and pepper. Bring to a boil. Reduce heat to medium-low. Cover and simmer for 15 minutes.
Add apples. Simmer for 5 more minutes, or until apples are tender but not mushy. Stir in coconut milk and cilantro. Heat for 1 more minute. Serve hot.
Makes 6 servings
Per serving: 229 calories, 6.5 g total fat (2.2 g saturated fat), 21 g protein, 22 g carbohydrate, 4 g fiber, 47 mg cholesterol, 356 mg sodium

I think I'm going to try this soon. I have never cooked salmon. I use canned salmon and mix with cornmeal for fried patties but this recipe looks light and fresh. I've ordered similar dishes at restaurants. Has anyone tried this at home? Neesy That orange glaze is speaking to me, y'all. I like asparagus but I'll probably serve it with broccoli and cauliflower and rice.

Looks yummy - just do not overcook (but you probably know that about fish already)

Salmon is full of omega 3 fatty acids that are good for your circulation and your brain. I love canned salmon too but don't usually make patties with it - normally I just add real mayo and some finely minced green onions - I'll eat it right out of a bowl like that or put it on some toasted whole grain bread.

I didn't know canned salmon could be eaten raw like tuna. Good to know. I need to try it. That sounds good.

So anyway - I was going to make a meat loaf tonight with lean ground beef and I was thinking of putting it in a heart shaped silicon baking pan I own. HaHa - Happy VD

(Valentine's Day) right?

I also took out a small pork tenderloin in case I change my mind and make spaghetti with meat balls, since a certain person in the house is not a big fan of pasta.

We will see which mood strikes me. The meatloaf served with mashed potatoes sounds like a good choice.

Then I will find a nice recipe for the pork but hold it until tomorrow (I just took it out of the freezer this morning).

I also have a spaghetti squash which I plan to cook - that is supposed to be good with a tomato sauce - have you ever tried it?

That really can be a pain in the butt - my iPhone always takes huge pics then I have to open them up in Paint and resize them.

It's sometimes easier just to post a random image from the internet :apthy: (except when I bake a really nice looking loaf of bread - then it seems worth the effort!)

I'm considering getting a Whopper from Burger King. I don't feel like cooking.
C'mon. Snap a pic on your phone and upload it. Just as easy as googling it. :)

You can resize and crop photos directly from your photo storage, no need to go through the troubles of opening paint.

I'm not a huge fan of spaghetti squash. It's okay, but don't expect it to taste like pasta just because it can be made to look like it. If your goal is to be reducing the number of points you're using and eating more vegetables (although technically it's a fruit), it works for that.
