You'll notice I left celery off the menu, I have a good recipe for celery, take a dozen sticks of celery, wash them, cut them into inch long pieces, steep them in vinegar overnight, the next morning drain them and throw them in the bin.
Bravo!!! I hate celery too - cannot stand it.

Tonight I made pork teriyaki and Basmati rice - it was very very good - I steeped ginger and garlic in bone broth and marinated the pork - it was all kinds of tedious and the kitchen was a disaster - but worth it! Salad on the side - no celery!

Right now I am making an egg dish called Eric Eggstrata from the Looneyspoons Collection cook book.

3 cup low-fat herb-seasoned croutons (I just used whole wheat bread cut into cubes)


8 oz light mild Italian sausage


1 cup diced zucchini


½ cup minced onions


½ cup diced red bell pepper


1 cup packed shredded light old (sharp) cheddar cheese


8 omega-3 eggs


1 cup 2% evaporated milk or light (5%) cream


¼ tsp salt and freshly ground black pepper

Directions

1. Spray an 11 x 7-inch casserole dish with cooking spray. Spread croutons evenly in bottom of dish. Set aside.


2. Spray a medium, non-stick skillet with cooking spray. Remove and discard casing from sausage. Break or cut sausage into small pieces and add to skillet. Cook over medium-high heat until no longer pink, breaking up any large pieces. Add zucchini, onions and red pepper. Reduce heat to medium. Cook and stir for about 3 more minutes, until vegetables begin to soften.


3. To assemble strata, spoon sausage mixture evenly over croutons. Top with shredded cheese. Whisk together eggs, milk, salt and pepper in a medium bowl. Pour egg mixture evenly over sausage and vegetables. Let strata stand for 15 minutes while you preheat oven to 350°F.


4. Bake, uncovered, for 40 minutes, until eggs are completely set. Let stand 5 minutes before serving.

This will be my brunch (first thing I am eating today) after doing 51 minutes on the stationary bike - I feel like I am finally on the right track to losing all those extra pounds!

I just had some - oh my God it was very good

(But that might be due to the fact that I got up at 9 a.m. but only ate for the first time 4 1/2 hours later, so I was pretty hungry).

How's your step counting going?

I'm so glad it turned out so tasty. It had a lot of flavors in there!

I try to get my 10,000 steps every day. Some days it's a breeze because I'm working around the house and yard. Some days, I barely move. So I know I need to stay on that.
