It's my last day at work before 6 weeks off of medical leave for my two surgeries. I should be losing my mind trying to wrap things up but I kicked so much ass this week that I have almost nothing to do. It's a weird feeling.
May the surgeries be successful with a quick recovery. Healing vibes, and positive thoughts.

What will you do for six weeks? Yes - I know you have to heal and I don't begrudge you this time off,:encouragement: but judging from your posts you may end up going a bit 'stir-crazy' - good luck and hope all goes well

Well, my DVR is full of shows I haven't had time to watch so I'll probably get caught up on that, do some reading, and just snuggle with my dogs as much as possible. Still, you're probably right that I'll go stir crazy, so there's a good chance I'll do some part-time work from home as soon as I'm recovered enough (probably around week 4) but we'll see. You'll almost certainly see me around here quite a bit more, at any rate.

Working. Finishing up the group project for my Finance class. Monday is the last class of that course. That will mark the halfway point for finishing my MBA! I'll have about a six week break from classes than it's straight on through December 2019 to finish up. Starting my Christmas shopping over the weekend as well.

Your progress is amazing swiftdog2.0 . Congrats on all you have succeeded in accomplishing thus far/ and much success with all future courses. Bet BrodyDog is proud of you!!:) Don;t forget Santa Paws has to bring special gifts for you know who (m)!

Today I decided to bake a fresh loaf of bread (it has been a while since I did this). That's been done and is out of the oven.

Then I will make a walnut raspberry streusel bar (actually going to use mixed frozen fruit in those) - It's a Weight Watchers recipe and is five points each.

Walnut Raspberry Streusel Bars

Serves: 16

Ingredients

  • 2 cups white whole wheat flour
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup finely chopped walnuts
  • 1 large egg, beaten
  • ¼ cup melted coconut oil
  • ½ cup fresh raspberries
  • 1 (10 ounce) jar raspberry fruit spread
  • ¼ cup quick-cooking oats

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk together flour, brown sugar, cinnamon, baking soda, and salt in medium bowl.
  3. Stir in the walnuts.
  4. Stir in egg and oil, one at a time, and mix until blended.
  5. Use your hands to mix all the ingredients together until the mixture becomes moist crumbs. Reserve ½ cup of the crumb mixture and set aside.
  6. Transfer the remaining crumb mixture to a 8 inch baking pan sprayed with cooking spray. Press crumb mixture into the pan forming an even layer. Bake the crust until it is lightly browned on the sides, about 10 – 12 minutes.
  7. In a small bowl, mash the raspberries. Stir in the fruit spread then spread that fruit mixture evenly over the cooked hot crust.
  8. Mix oats with the remaining streusel mixture and sprinkle over the top of the fruit spread.
  9. Bake for 20 – 22 minutes or until fruit is bubbly and the streusel mixture is brown on top. If you are using a larger 9 inch pan your baking time might be 15 – 20 minutes so just keep an eye on it.
  10. Let it cool completely then cut into 16 squares.
I'm not going to use coconut oil - the original recipe is in a Weight Watchers cook book I got from the library and it calls for canola oil.
