Alternative Pasta

My dad lives with me a he has type 2 diabetes. He's got it under control pretty well but I'm always thinking about things to make that don't raise his sugar levels and that everyone else can eat too. I tried whole wheat pasta once and it was horrible but it maybe it was just the brand I bought or maybe it's better than it used to be. There is quinoa pasta out there now that from what I've read tastes good. It's expensive and has a pretty limited selection of pasta types but I can live the expensive as long as it's good. I also see mixes of quinoa and wheat or brown rice etc.

So anyway, my question is do any of you guys eat this stuff and can you recommend products, brands, etc that are good?

I use brilla.. and store brought stuff. I found the cut of pasta makes big deal how it comes out. Some types little bow ties do better then the elbow. veggie made pasta from brilla also did really good. Store brand stuff good. Keep in mind that thou the box tells you a center time I watch them close...the times can be off. Always taste one before you it out of the pot.

I've used Jerusalem spaghetti. Always red sauces, no white and I always add fresh mushrooms and bell pepper chopped up in the sauce. It's not bad.

Portion size important. And I always had a veggie tray overflowing with cut up things to add some flavor variety for the taste palette.

Even though I'm not cooking for a diabetic anymore, I still go to the store and come home with lots of veggies and cut them up immediately and put them in containers in fridge so when I get snacky, I reach for celery, carrots, cukes, radishes, cabbage, baby peppers various colors. I recommend that for your dad.

....I think he will be safe to continue to eat regular pasta Joe, as long as he doesn't over indulge.....slower acting carbs......
