Sounds like what my Mom used to eat - head cheese is what they called it. So people in "America" (as Andy calls it) will eat scrapple yet balk at haggis - this seems to be a contradiction.LOL. I would have loved to see the looks on those faces when you told them Scrapple is typically made of hog offal, such as the head, heart, liver, and other trimmings, which are boiled with any bones attached (often the entire head), to make a broth. Once cooked, bones and fat are discarded, the meat is reserved, and cornmeal is boiled in the broth to make a mush. The meat, finely minced, is returned to the pot and seasonings are added. The mush is formed into loaves and allowed to cool thoroughly until set.
Or did you just tell them it’s made from the leftover scraps of butchered meat that nobody in their right mind would normally eat, and made into a mish-mashed edible cube?
I will have to taste some of this scrapple one of these days
