I am an absolute freakazoid about expiration dates, best-by-dates, etc. Am constantly worried about food/product tampering as well. Won't use an "expired" product, even though I know that realistically it is probably still good - I've wasted a lot of money, I know. My mom will literally scrape the mold off something and still eat it ( ) and can't figure out how I got so weird. It's probably just another example of anxiety/fear rearing its ugly head (in my case anyway).

Bad fruit? Cut out the squashy parts and eat the fruit. Optical potatoes? Gouge out the eyes and eat the potato.
And she somehow manages to raise a daughter that won't touch anything if it isn't fresh. Canned goods are fine of course, but if the expiration date has passed even the canned stuff goes bye-bye.

Soft cheeses, such as cottage cheese, cream cheese and ricotta cheese, with mold should be discarded. The same goes for any kind of cheese that's shredded, crumbled or sliced.
With these cheeses, the mold can send threads throughout the cheese. In addition, harmful bacteria, such as listeria, brucella, salmonella and E. coli, can grow along with the mold.
Mold generally can't penetrate far into hard and semisoft cheeses, such as cheddar, Colby, Parmesan and Swiss. So you can cut away the moldy part and eat the rest of the cheese. Cut off at least 1 inch (2.5 centimeters) around and below the moldy spot. Be sure to keep the knife out of the mold, so it doesn't contaminate other parts of the cheese.
Of course, not all molds pose a risk. In fact, some types of mold are used to make cheeses, such as Brie and Camembert. These molds are safe to eat.
If you're not sure what type of cheese you have or what to do if it grows mold, the safe course is to discard it.

Lots of folks don't do certain cheeses due to their odors. When I was a kid you couldn't have paid me to eat cheeses that I love now. I believe that taste buds mature over time which is why kids tend not to like certain veggies and other foods which adults like.So that's why I can't stand bleu cheese! No, really. I don't eat the stuff. And Swiss, to my nose, smells like Athlete's Foot.
And yet, I will eat mushrooms and brussel sprouts and I prefer goat's milk over cow's when I can get it. Go figure.
