Grinch Cookies

Ingredients
1 cup butter, 1 cup sugar, 1 egg, 2 -2 1/4 cups sifted flour, 1 teaspoon baking soda, 1/4 tsp salt)
- Cream the butter, add the sugar gradually, creaming well after each addition, add the egg and beat it into the fat-sugar mixture until fluffy. (Add 1 tsp vanilla if you want at this point); (and if you're making Grinch cookies, put the green food colour in too).
Sift flour, soda and salt together and stir into the first mixture until dough is sticky when tested with the knuckles. Then put those Andes Mints or I would even just use chocolate chips and skip the mints.
By the way, if anyone is going to use this recipe, don't add that extra amount of butter or egg up above - that is just for the cookie mix version.

- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
- ½ cup butter or margarine, softened
- 6 to 8 drops green food color
- 1 egg
- ¾ package Andes Mints
- 1 cup semisweet chocolate chips
- Heat oven to 350°F.
- In large bowl, stir cookie mix, butter, food color and egg until soft dough forms.
- Stir in chopped Andes Mints and chocolate chips.
- Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.
- Bake 8 to 10 minutes or until set.
- If your oven runs hot, then check them at 6 minutes.
- Cool for about 3 minutes; remove from cookie sheet to wire rack.
- Store tightly covered at room temperature.
