Grinch Cookies

Ingredients
  • 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
  • ½ cup butter or margarine, softened
  • 6 to 8 drops green food color
  • 1 egg
  • ¾ package Andes Mints
  • 1 cup semisweet chocolate chips
Instructions
  1. Heat oven to 350°F.
  2. In large bowl, stir cookie mix, butter, food color and egg until soft dough forms.
  3. Stir in chopped Andes Mints and chocolate chips.
  4. Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.
  5. Bake 8 to 10 minutes or until set.
  6. If your oven runs hot, then check them at 6 minutes.
  7. Cool for about 3 minutes; remove from cookie sheet to wire rack.
  8. Store tightly covered at room temperature.
Another way to do it would be to just make a basic butter cookie recipe (without using the Betty Crocker shortcut)

1 cup butter, 1 cup sugar, 1 egg, 2 -2 1/4 cups sifted flour, 1 teaspoon baking soda, 1/4 tsp salt)

- Cream the butter, add the sugar gradually, creaming well after each addition, add the egg and beat it into the fat-sugar mixture until fluffy. (Add 1 tsp vanilla if you want at this point); (and if you're making Grinch cookies, put the green food colour in too).

Sift flour, soda and salt together and stir into the first mixture until dough is sticky when tested with the knuckles. Then put those Andes Mints or I would even just use chocolate chips and skip the mints.

By the way, if anyone is going to use this recipe, don't add that extra amount of butter or egg up above - that is just for the cookie mix version.

Totally agree. I despise the traffic and the grumpy people pushing and shoving. And my temperature always goes through the roof in stores waiting in lines. I need a fan directly on my face Mr. J.C. Penneys. So, that's why I will have my shopping done this month. I ain't rubbing elbows with the masses because I can get snarly -- sort of defeats the purpose of my happy little Christmas bubble.

I have not started saying any holiday greeting at this point, but when the time comes, I hope everyone can just not lose their collective sh*t if someone gives them a greeting that is meant with good will and intent.
....yeah Deej!....what the hell is it with JCP?????....ours is like standing in a sauna....is some kind of less than subtle marketing ploy?....sweat your clothes through so you have to buy even more???....if so, they're going to be utterly revolted when I drop trou at the checkout and start pulling on some new tighty whitey's.....

In the past, It could be 30 below and I would leave my coat in the car instead of lugging it around a mall with me. Or wearing it. And that still didn't help with my comfort level.

....I'm with ya.....especially if I'm wearing one of my leather jackets.....those sumbeetches weigh just about as much as the cow they were taken from, and I ain't about wearing it inside or totin' the herd around....

I liked the Little animated Drummer Boy, but it was hard to watch. I didn't like to see the kid and animals mistreated, and then the sheep dies -- but Jesus or God or Parsley, Sage, Rosemary or Thyme bring him back to life. It was all very traumatic being punked like that.

I made cookies :m_excited:

Chocolate chip ones with real butter etc. made from scratch - Deej - I think it was talking about the Grinch cookies that got me going - so thanks! It's only November and I'm getting my baking groove back
