I do like broccoli casserole. Haven't had any in a couple of years due to events, so thanks! This sounds easy enough.Seems our friendly ghost19 has been trying his hand at cooking lately. I know his raccoons have enjoyed some of his less edible dishes. I also saw that he made some spaghetti that his son and he actually ate and enjoyed, so good for you, ghost! I know you'll just keep getting better and better.
I thought ghost could still use a little help from his friends here on the board, so this thread is for members to post EASY recipes for ghost to try. Ghost, let us know what types of foods you and your boy like. I'm posting an easy broccoli casserole here, but I'm not sure if you like broccoli or not. If not, let me know, and I'll post something more to your liking!
Easy Broccoli Casserole
1 frozen bag of chopped broccoli
1 small jar Cheez Whiz
3/4 stick of margarine
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup dry Minute Rice
In a medium saucepan, boil the broccoli in water until tender; drain.
In a large bowl, mix the Cheez Whiz and margarine (chopped into chunks). Microwave for about one minute, then stir together until margarine is melted. Add both soups and uncooked rice to the bowl. Mix this together with broccoli in a 2-quart baking dish. Bake at 350 degrees for 30 minutes.
You can also add diced, cooked chicken to the casserole to make it more of a meal.
That sounds bad ass, and easy enough for a dolt like me to maybe make....we'll see.Chicken Taco Soup
One bag of Tyson cubed chicken (or shredded). Find in frozen section.
Two cans light or dark kidney beans
One can cream corn
One can regular corn
One can Rotel
One can Northern beans or any white bean
One package of Fajita mix.
One regular size bottle of V-8 tomato juice.
You can't go wrong. Pour all ingredients into pot, adding liquid last to avoid splashing. Stir while on high heat. Once hot then immediately lower temp to a medium heat for 30 minutes to an hour, stirring occasionally. Serve with white tortilla corn chips or over rice. I make it all the time.
That's about at my skill level....I think I have a box of these or something similar in the freezer...Ghost! Boil 3 minutes and put a bit of butter in each one. num num num

i pound ground beef with as much onions you would like browned in pan
1 lg and 1 small canned whole tomatoes
1 box sea shell noodles
salt to your tasing
Cook noodles until done al dente, drain, add ground beef and onion and both cans of tomatoes breaking up them up to mix among the noodles and beef. Bring up to a bubbling, then tone down to a simmer, stir from time to time until hot through and through. Salt really enhances mixture. If you like spicy, use a large and small can of Rotel. Zippy!
Vegetarian version: when combining noodles and tomatoes place a stick of margarine on top while mixture heats and serve when stick has completely melted and concoction is hot! This is my Lenten friday dinner.!

One pot casserole
Boil egg noodles or macaroni (elbows, small shells, bowties) until done (about 8-10 minutes)
Drain noodles and place back into the pot.
Open a can of cream of mushroom (or broccoli or chicken, etc) soup and mix into the noodles. Add a little milk until just creamy.
Add a protein if you want (can of tuna, can of chicken, etc.)
Add a veggie if you want (can of peas, cooked broccoli, etc.)
Boom! Easy comfort food!

Pasta and meat sauce:
Ingredients:
- 1 onion
- ground mince/beef
- 1 can of tomatoes in juice
- 1 can of tomato puree/or paste
- pasta (any kind: spirals, pene, spaghetti etc)
- salt and pepper (to taste)
- spices and herbs (pretty much anything works... just experiment as you go)
- teaspoon (or two) of brown sugar
- red wine (if you have any, it's not essential)
Method:
Heat a small amount of cooking oil in a pan or pot on the stove top.
Chop the onion, then place in pan/pot and cook until lightly browned.
Add the ground mince/beef and cook until lightly browned.
Add the can of tomatoes and puree/or paste, mix in.
Add the salt, pepper and other herbs and spices. (at this point I also usually throw in some hot (Worcester) sauce and sweet Thai chili sauce too)
Add the brown sugar and splash in some red wine, then just simmer on a low heat.
Bring a large pot of hot water (with a little added salt) to the boil.
Pour in the pasta of your choice and cook in the boiling water for the time specified on the packet. (for dried pasta, usually around 9-10 minutes)
Try a piece of pasta and if it is "firm to the bite" (al dente) then it's ready.
Drain the water from the pasta and wash the pasta in fresh hot water, then drain again.
Place pasta on the plate, sprinkle with some Parmesan cheese, spoon the pasta sauce over the pasta and top with some more grated Parmesan cheese.
Serve with a side salad... and a glass of red wine.
What do you and your son like to eat, Ghost? I have a pather of easypeasy, done in about 30 minutes recipes that I use during the week. We save most of the more complicated stuff for weekends. And a crock pot is a GREAT investment. Almost impossible to mess up one of those meals.
I have a crock pot tortellini soup that is bad-ASS, if you like tortellini and tomatoes (along with some other stuff, of course!)
Gotcha. Let me give this some thought.I've got a relatively new crock pot that I found in a closet back in my extra bedroom a couple of months ago. I've made cheese dip a couple of times in it. We're not picky, mostly we just get tired of eating crap you take out of a box and throw in the microwave every night. Neither of us likes spicy food, we're both more hospital cafeteria type food guys...lol
