How many knives?

I always thought that marketing bombs us with special tools that just end up taking space and collecting dust.

I mean yeah sure, they do have their purpose in professional level cooking, but in the everyday kitchen ?

Nowadays I only keep two, a Chef's knife, and a paring knife. (plus 6 steak knives)

What do you guys do ?

I like my knives. I have several.....most of which I don't know the names for, I have the long pointy sharp one, the long rippled edge one, a long thin really sharp one, a short stubby one, a normal sized sharp one, a short fat one, and a thing to sharpen them all with :D

I do not know the name of the knife, but it has little grooves set along the blade. Not serrated, the edge itself is flat and not very sharp. One came in my last set of knives, and I will always have one around now! It is amazing at cubing chicken, nothing sticks to it and it works like a breeze! ;-D

Other than that, I use a paring knife the most often.

That sounds like my short fat knife. I use it to chop veggies. Now, I'm gonna try cubing some chicken!

Chefs do not usually use the fancy gadgets. We use a french knife because we can dice as well as the appliances lol.
