Along with what Blunt said, Whole Foods has a brand, Fork in the Road? If I remember correctly they're all-beef hot dogs, and they are delicious! I've also seen and used all-beef kielbasa, but I don't know how good they would be by your standards; it's the same kielbasa you can find in Wal-Mart, Winco, and I think even Smith's. Not gourmet, but good enough in a pinch. And what's that brand of kosher hot dogs? I can't remember, but they're really really tasty, and I think they're all-beef as well.
Of course, I don't have a clue which stores you have nearby, so this could all be completely useless information....

I used to buy brats or some kind of sausages made from chicken and/or turkey at SAM's Club. I imagine Costco has them, too. We have Kroger grocery stores here and they sell turkey sausage. And there are a number of all-beef hot dogs available.

I just bought some Turkey Franks made by Butterball.

Not too bad - good on a whole wheat hot dog bun - I am trying them because I have not eaten any type of pork products in maybe 3 or 4 weeks now and I find I don't miss it.
