For the last year or so I have stopped boiling and started steaming eggs to hard cook them. They peel perfectly just about every time.

Fresh eggs are hard to peel. You need to keep em a while.
I've heard that one, too, but it doesn't matter for me. I think it really has a lot more to do with operator error than the egg itself.
It should not mean a lot to you. In cooking school, it did to me but I am older and wiser now. Carrie's Younger Brother is right though. We steamed them there. What I meant was that it doesn't make a difference whether they're old or new, not that it doesn't matter as in I don't care one way or the other.
