Already covered in a previous post. But hey, if anything goes, why can't the folks in Terminus turn out to be lizard-like aliens after all, or maybe the zombies just had a bad pint or two and will be normal when they sober up, or whatever BS you want to think of? You have to have limits and a certain internal logic.
And I maintain, the quickest way to deal with Joe was actually NOT to try biting his throat. Even if such a thing is humanly possible, and even if we allow for hysterical strength, the risk of it not working is too high and the action takes far too long. As soon as Joe felt teeth in his neck, you know what the natural reaction should have been? To push Rick away and/or get fingers in the eyes or punches into the ribs. Basically, it gave Joe too much of an opportunity to react. The advantage was still his.
A butt to the nose, etc, immediately puts Joe on the defensive and Rick has the advantage, plus it's the more natural reaction. If you've ever been in a fight, arms pinned, etc, what's your first reaction been: head-butt, or to go Drac? (I have been, and my reaction was to go for the head-butt.)
Even if you decided to put the bite on someone, you'd go for nose, brow ridge, cheeks, lips, or chin. Going for the neck implies a conscious decision, and as such more or less removes the hysterical strength possibility (these are people essentially out of control).
Badass it may have been, gruesome it definitely was, but it's also complete BS. It's a lie told only for a certain effect, and in storytelling, you should always tell the truth.

Different people act on different first impulses when in a rage, some go for tearing out the throat, others tearing off something else... although I look at it from more of a supernatural rather than merely hysterical strength angle... (like when on Supernatural demonically-altered blood charged up a virus that made people act like crazed cannibals, rather than meth or crack or whatnot) Different 'verses have different rules as well, some more believable to various viewers than to others...

I wouldn't discount the bite reflex. I have been to incidents where people have bitten other people. In fact, there was one fight where a guy bit another guy's nose off. We were looking for the guy's nose when one of our fellows said "I think I found it" then said "nah its just a piece of gum".. Then he took a closer look and said "yep I got it, hair doesn't grow out of gum".. :)

Then he took a closer look and said "yep I got it, hair doesn't grow out of gum".. :)
