Well roasted is delicious of course. But fried is the bomb diggity!! It's a bit of expense to do it, but damn it's yummy. I make up a butter cajun marinade and inject into the breasts and thighs before frying it. It leaches out a bit during frying and seasons the bird externally, but it also keeps the meat super moist and tender. Also frying a 20lb bird takes about an hour whereas roasting is about a 3.5 hours process.
Love the deep-fried turkey. Don't love paying more for the oil than we do for the bird.
We're going with the new conventional wisdom (yes, that's an oxymoron, just like "new and improved") and cooking it upside down for the first hour or so. Then we'll right it, stuff it, and pop it back in. (By "we," I mean "I.") We'll (I'll) have stuffing enhanced with spicy sausage, celery, onion, and mushroom. And I stopped at my favorite spices store and got a poultry blend that I think will be wonderful on the bird.
We gots lotsa other stuff going on too. The house is gonna smell great.
