I took a slab of wild-caught salmon, spiced it up with New Orleans spices, black pepper, cumin, and garlic. Then put on a layer of pepperoni. Then put on white onion. Then a layer of fresh spinach. Wrapped it up in foil and cooked it on the grill.

It was delicious. Some of the best salmon I've ever prepared. We had it along with a Caesar salad and baked potato, and every bite that disappeared into our mouths was delicious.

The attached picture shows the salmon in mid-prep, before I completely covered it in spinach.

Seriously, it was wonderful. I think I cook pretty well, and once in a while I tap out a home run. This was a home run.

Made a very good Chicken Macaroni Salad with diced celery, grated carrot, parsley, onion and garlic salt - used Hellman's Half the Fat dressing and diced up cooked white meat chicken. After sprinkling paprika on top I let it mellow in the fridge.

Mmmm, mmmmm it was so good.

I cannot believe son and GF did not have any - instead they went out to McDonald's and spent 26 bucks on burgers, fries and pops (sodas). They'll slowly kill themselves if they keep eating that junk food.

I had to go to work at 4:30 so I wasn't around to guilt them into eating something better.

Diner's choice of leftovers tonight: ribeye steak or herbed chicken breasts. I've made my favorite salad to go with either: fresh kale, halved cherry tomatoes, sliced onions, slivered carrots, and dried cranberries drizzled with a dressing of olive oil, apple cider vinegar, salt, pepper, and sugar.
