I decided to experiment. I found a recipe for a chilli rellenos casserole. The recipe called for canned chillis and I had to substitue fresh ones. I don't think it hurt the recipe, though. I blanched them to make it easier to line the bottom of the dish and it worked out a treat. Definitely doing them again.

Meatloaf!
I found a great receipe:
1 1/2 pounds ground beef
2 eggs beaten
1/4 cup ketchup
3/4 cup dry bread stuffing mix
1 packet dry ranch dressing
1 package meatloaf seasoning
1 can of French's fried onions

Mix all together, put in pan, shape into a loaf, and bake at 350 degrees for about 55 minutes
My family actually asks for me to make this! It is sooooooooo good!

Why do they call it supper? Supper. Supper the little children. Hey, Grandpa! What's for supper! Remember that? You got Grandpa by the window and he puts his fingers on the grid...no glass...and he says what's for supper and everyone goes, yum! yum! Like Grandpa cooks. Last I checked, Grandpa was holding Grandma's shoe saying hello? hello? after the phone rang...friggin' telemarketeers! Supper is too far away to consider...haven't had breakfast as yet.

Chili, made with chorizo. Grated cheddar and sour cream available to tone it down for Grandma.

Earlier today, I made one of my best batches of banana bread ever. We ate slices of it, hot and buttered, before we each went out for our separate errands. It was a mood-enhancer. I'd loaded it up with blueberries and chocolate chips.

Yesterday, our grandson was in the neighborhood making some cash doing yardwork. We brought him into the house for lunch, whatever he wanted. He got out a small slab of salmon out, whipped up a bread crumb and egg batter, used teriyaki sauce and some spices on it, and pan-fried it. Really? 16? How many 16-year-olds would do that for their own lunch?

I did not care for the Campbells Luau sauce for pork, but the family seemed to like it.

Tonight it is Easy Mexican Casserole, ole! served with a tossed salad with garlic/herb dressing.

That casserole was a hit and voted into the rotation as a keeper fer sure fer sure. Tonight it is Easy Shake and Bake Chicken with escalloped potatoes. No store bought coating for my chicken.
