Working from home today.

Watching the rain and wind from what's left of Hurricane Jose out my window. Sneaky trickster slid back in along the NE coast.

Will do some cleaning around SwiftDog Manor.
When you finish at the Manor, I could use a little help with the shanty shack...... and more importantly, I'd really appreciate it if you could help the college kids next door.....it sounds as if they've formed a band, and have no idea how to play guitar, drums, or sing.....either they've formed a band, or they're murdering someone every night with a trainwreck soundtrack playing in the background.

So far I have cooked the pasta (had to use shells - no penne pasta) and now I am roasting the red and yellow peppers in the oven with a drizzle of olive oil, coarse sea salt and freshly ground pepper - 15 - 18 minutes at 400 degrees.

Sauteed the zucchini, onion and garlic in butter and olive oil in a cast iron pan.

After I put the 1 cup of cottage cheese through the blender and added a bit of milk to thin in out, I mixed that with the pasta shells.

Then you layer the veggie mixture with the pasta shells and sprinkle a bit of Italian seasoning over the diced tomatoes (I think I forgot to mention that I drained a can of Olive Oil and Pepper diced tomatoes with a sieve and then used that with the veggie layers.)

Final step is to cover it all with shredded mozzarella cheese - it said 1/2 cup but to be honest I'm sure I used twice that amount.

Just took it out of the oven and it smells so delicious! :m_pan:

Wow - just realized that this is a vegetarian (not vegan) recipe - I should take some to work, as the girl I am working with is a vegetarian.

Time sure flies when you're busy - have to leave in about half an hour so must log off :a17:

Not going anywhere in that heat, gonna spent time with my family, books, movies, the AC and my gigantic fan. :)

What part of Canada, Srbo? I don't envy you. I like cold weather, hate heat. Especially humid heat. Yuck.

Errand day today.

Brought in the screen that Brody Dog jumped through to get repairs.

Got a haircut.

Did some grocery shopping.

Went to the Apple Store to see if they could fix my stupid iPhone. Only had it a few months and one of the speakers is blown :( Couldn't get an appointment with the "Genius Bar" until Tuesday night. PITA!

My Ikea Addicted Girlfriend called...i had a sense of foreboding.
But she invited me for Lunch (Spinach Lasagna) and i drove faster than the Devil to get to her.

The Lasagna was great and i was soooo Happy and then she said

Waterproofed my new Doc Marten shoes and Timberland boots. Old boots were another victim of Mr. Brody Dog's incessant chewing :mad-new: My fault for leaving them at SwiftMom's after the last snowstorm back in March.

Gotta stop at Wallyworld to get a pair of insoles for the new shoes.

Will watch the Pats game. Hopefully, Gronk, Amendola, and Hightower are all back on the field.

Will take sneak peeks at the Sox game as well. Going for the sweep of the Reds today! Hopefully, they sow up the division title early this week. Then it will be time to worry about Cleveland.
