Most restaraunts here in Canada use Canola oil. It is grown here in Alberta. Canola is as healthy as olive oil but does not have any odor or taste so foods cooked in oil retain their own flavor. We also use it for things like vinegarettes. Peanut oil is a no no in eateries because it can cause an allergic reaction. I always use canola. Remember that really old actor, Canadian Raymond Burr? He had a farm here out west and he grew it. Lol, just some of my useless facts.Olive oil is not the right way to go with frying. You have to add butter to settle it down, You got to use Veg oil or Peanut.
