Hey ... so, I just pulled the cardboard things off the new cookie sheets, and on the back there is a recipe for salted chocolate chip cookies. It mostly looks like chocolate chip cookies with sea salt on top—not that there's anything wrong with that—but it calls for cake flour instead of all-purpose. Have any of you ever used cake flour for cookies? I mean, it's FABULOUS for cakes, but ... I feel like I might be bordering on heresy by considering using it for cookies.
Yeah, I'm not a big fan of cakey cookies ... I don't know. On the other hand, the taste of cake flour is so much purer and cleaner than that of all-purpose flour. It's tempting.I would think it would make the cookie puffy and cake like in texture. Might be something different.
Oh, these are good. Not a traditional Christmas cookie, by any means, but really, really lovely. Delicate, fragrant, and pretty.I don't know how the Earl Grey shortbread cookies will turn out as a finished product, but the dough is delicious.
