Super easy. Make a brining solution of 2 C water, 2 C coffee, 1/4 C kosher salt, 3T sugar, 1/2 t red pepper flakes, 2 T chili powder, 3 crushed cloves garlic, and a cinnamon stick. Pour over 8 chicken drums, either in a bag or in a bowl and weigh them down with a plate (to keep them immersed). Let the drumsticks marinate for at least 2 hours--I like overnight best. Arrange on a baking sheet (discard brine) and cook on broil for 10 mins. Turn, then cook 10 mins longer. Turn the oven down to 350 and continue to bake for 10 mins (15 more, if the legs are thick). Done!Thanks, I was amazed at how simple it is, despite the careful steps involved. I've decided it all comes down to paying attention to the recipe. I think I'm brave enough to tinker with some recipes now, add a little of this or that, heh heh.
By the way, I was going to ask you about the coffee brined drumsticks. Never heard of that. How did you cook them? Sounds interesting.
