Will the Talisman 3 ever happen?

Yeah, I wish they would do it, but it doesn't seem likely, in the conversation with John Grisham, he talked about future projects and said nothing about another collaboration with Straub.

There are interviews from circa 2014 where Peter said they are going to do another one ... as of yet, nope.
6 years is but a blink of an eye in another perspective....
Maybe Steve and Peter are working on it in The Territories.
Until they find a time that works for both of them, they're not going to be writing it. They aren't going to drop projects they're working on just to take up writing Talisman 3 as they wouldn't want to lose the flow of their work.
What seems remarkable to me is that they managed to find that time two times.
In nineteen years they haven't been able to find a break in thier schedules?
Even if they wrote a few chapters each year then they would have been finished by now. Also, I take it that you have met Peter, Marsha?
....just took a brief look at a speech he gave in 2016, where he stated "WITH ANY LUCK, it will happen in February of next year (2107)". He went on to say that the concept was already thought out, but it seems that nothing ever goes as planned....life has a way to putting the screws to many a thing.....
....oh sure!....bring logic into it.....

Peter seems like such a cool dude. I never meant to imply that Steve hasn't been up to anything, just that Ol' Travelin' Jack and that magic juice from The Territes' is a waiting.
