Word to the wise: aluminum cookie sheets stay hotter much longer than ones not made from aluminum. DO NOT grab them barehanded, even if they have been out of the oven for several minutes. Otherwise, you may just lose an entire dozen chocolate cookies on the kitchen floor, as well as burn your hand.

I only make them once a year, and they're usually a big hit. (They're only not a big hit with the weirdos that don't like chocolate.) oooooh - you said "gelid" - I love it when I have to look up those new words!They're not liquid or gelid if you lightly touch one. They will be soft, but not squishy. Just from experience, I'd pull them no later than the 12 minute mark, and maybe even earlier (my oven cooks hot).

I find them much easier than cookies because you make a 9 x 9 inch pan then just cut them up to whatever size you prefer:
