Soft ginger cookies are next! I make these every year. They're so wonderful. And cute! Very cute. I'll post a pic when the first batch is out of the oven, but in the meantime, here is the recipe. (It's from a church cookbook, so you know it's serious stuff.)

Ginger Cookies
INGREDIENTS
1 c. sugar
3/4 c. shortening (I use butter flavor Crisco)
2 c. flour
2 tsp. baking soda
1/4 tsp. salt
1/4 c. molasses
1 tsp. ginger
1 tsp. cloves
1 tsp. cinnamon
1 egg
Sugar for rolling
Turbinado sugar for topping (optional)

DIRECTIONS
Mix ingredients as listed, then roll into balls and roll in sugar. Place on cookie sheet and lightly (lightly!) smoosh with your palm or the bottom of a glass. Sprinkle with turbinado sugar, if using. Bake eight to 10 minutes at 325°.

Sorry I didn't get back to you sooner--DD#2 commandeered my computer for ACT practice tests last night :)

Coffee Crisps:
4 tsp water
2 tsp instant coffee or instant espresso powder
Dissolve powder in water in a small bowl
(You can also use 4 tsp of very strong coffee or espresso)

1/2 C butter
1 C sugar
1/4 Tsp salt
2 eggs
1 1/2 C flour

In a large mixing bowl beat butter with an electric mixer on med to hi speed for 30 secs. Add sugar and salt and beat until combined. Add eggs and coffee mixture; beat until combined, then add as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour

Drop dough by slightly rounded tsps 2 inches apart onto lightly greased cookie sheet; spread dough into 2 in circles.

Bake in 350 oven for 9-11 mins (according to recipe. I usually go 7-9 mins), or until browned around the edges. Cool on cookie sheet for 2 mins, then transfer to wire rack to cool completely. Makes about 20 cookies (I usually make them a little smaller in order to get an even 2 dozen. Because I have to or I can't sleep--lol)

Coffee icing
stir together 1/8 tsp espresso powder and 1 Tbsp whipping cream until coffee is dissolved. In a small mixing bowl, combine 1 C sifted powdered sugar the coffee-cream mixture, and enough whipping cream (1-2 Tbsp) to make icing of piping consistency.

I've been baking the same Christmas cookies every year for...well, for a long time. I only make them once a year, and they're usually a big hit. (They're only not a big hit with the weirdos that don't like chocolate.) But after looking through this thread, I've gotten some new ideas! Finally! I especially might have to try those Hungarian cookies...yum...

(They're only not a big hit with the weirdos that don't like chocolate.) But after looking through this thread, I've gotten some new ideas! Finally! I especially might have to try those Hungarian cookies...yum...
Who understands those people who don't like chocolate, anyway? I mean, really. Not like chocolate??

Salted caramel pretzel chocolate chip cookies. But I got sick of saying that long name, so I call them skippies.

Oh thank god! I was planning on making these but didn't want to say the full name. Daughter and I have been calling them mess cookies, but didn't want to use that for the public. Skippies they shall be.

Don't have any pics, but we got peanut butter blossoms, snickerdoodle surprises (they have a rolo melted inside!) and chocolate peppermint cookies done today. Whew!

They're not liquid or gelid if you lightly touch one. They will be soft, but not squishy. Just from experience, I'd pull them no later than the 12 minute mark, and maybe even earlier (my oven cooks hot).
oooooh - you said "gelid" :biggrin-new: - I love it when I have to look up those new words!

Can I include recipes for squares which (in my opinion) are quite similar to cookies?

On Friday I brought Butterscotch Oh Henry squares to work

I find them much easier than cookies because you make a 9 x 9 inch pan then just cut them up to whatever size you prefer:

Those look great Neesy! I think squares count just fine.

Forgot to mention earlier that I used parchment paper based on the feedback on this thread. I hadn't used it before and LOVE it! Thanks folks!
