I'm dong a quick drive by posting. :)

What do you put on your nachos?

I make nachos compuestos.

Spread refried beans on the tostada/ corn tortilla chip first. (For those people who like cheese xD , add cheese after the beans.) Slices of jalapenos next followed by seasoned ground beef. Put them under the broiler for a minute or two. Top with guacamole. If you like crema/sour cream that should go on last.

It depends on what I've got on hand, and what I want. If I'm lazy, I'll use what's on hand. If I'm not, I'll go get the stuff.

So the super-duper extra-deluxe version goes something like this:
- cooked ground beef with fajita seasoning, garlic, and extra cumin (Badia's a good one to use) spooned onto plain tortilla chips
- hot queso on top of that
- salsa
- chopped black olives
- chopped scallions
- strategically-placed piles of guacamole and sour cream at four corners of the plate

Extra tortilla chips.

The dumbed-down version is a can of Rosarita refried black beans all doctored up with chili powder, cumin, garlic, salt, and pepper, heated up with shredded Mexican mix cheese (or just plain old cheddar) on top. On top of that is spooned salsa. Sour cream. Done.

Shredded seasoned chicken or ground beef or ground turkey, each seasoned with chili powder, cumin, garlic, pepper, crushed red pepper, paprika, maybe cilantro, and probably a few speciality spices.

Chopped sauteed onions. Maybe some chopped bell pepper, orange or red, thrown in the skillet too. Along with either Anaheim or poblanos.

Black olives.

Refritos in scattered little glops.

Maybe jalapenos, maybe not. Depends on the crowd.

Stack chips and all that in layers. Grated cheese all over it. Our family is a dairy family. Cheese is at the top of the food pyramid in our gene pool.

Microwave till the cheese melts, and serve with salsa, sour cream, and my own guacamole, all on the side for dipping.
