...I like nachos almost as much as I like cookies....the local Mexican joint-Mexico Tapico, does a great Southwest version-heaped high on a huge old plate....that, combined with a mega-large frosted glass of Dos Equis, is about gustatory Nirvana for me...

Shredded seasoned chicken or ground beef or ground turkey, each seasoned with chili powder, cumin, garlic, pepper, crushed red pepper, paprika, maybe cilantro, and probably a few speciality spices.

Chopped sauteed onions. Maybe some chopped bell pepper, orange or red, thrown in the skillet too. Along with either Anaheim or poblanos.

Black olives.

Refritos in scattered little glops.

Maybe jalapenos, maybe not. Depends on the crowd.

Stack chips and all that in layers. Grated cheese all over it. Our family is a dairy family. Cheese is at the top of the food pyramid in our gene pool.

Microwave till the cheese melts, and serve with salsa, sour cream, and my own guacamole, all on the side for dipping.

Love nachos- during my internship, we would have nacho/margarita de-stress days (when we weren't spending 80hrs/wk in the clinic...). I'll eat pretty much anything on them, but love fajita meat, guacamole, sparse jalapenos, and all the cheese!

Dos Equis amber, of course. There was a place in Louisiana called The Puerto Rican Restaurant I used to frequent which had the best nachos I've ever had. The order consisted of a plate with perhaps a dozen chips which were not piled on each other but lined up. On each chip was some spicy ground beef and a single jalapeño slice. They were absolutely delicious. I would, a "Fried Burrito", the filling of which was refried beans, and some kind of beer. Now I sometimes order a bean chimichanga, but have to ask that they fry it longer than usual.

Scoops are nachos that look like a scoop. On my nachos, I want spicy mexican ground beef, hot peppers, green peppers, onions, tomatoes diced, black olives and cheddar cheese on top with a side of sour cream.
