Neesy I know you're a very good cook (and baker!). I was just wondering what you make that your son (Josh?) likes the best. :)

I think he enjoys home made pizza the best.

I make the crust with flour and yeast so that is probably why - it's fresher than take out and much better than frozen;

What do you make that is really good? (Your spinach dip sounded absolutely delicious)

Wow - wish I could make homemade pizza! I steer clear of anything that difficult. :)

Wish I was more talented in this area. When I have access to Hulu, I love to watch the cooking shows from The Food Network. Used to watch all the cooking shows on PBS on Saturday mornings too. I love Jacques Pepin - he's a real class act, down-to-earth guy. (Checked out one of his cookbooks from the library a few months ago.)

Anyhoo...I make decent salsa, pico de gallo, veggie lasagna, veggie chili and as far as baking goes - an okay banana bread and pumpkin bread. I made up a vegan recipe that even a few hardcore meat lovers have enjoyed - Vegan Italian sausage with roasted red peppers and onions, served over Mediterranean quinoa with a tahini/tomato dressing drizzled on top.

On a ridiculously tight budget right now, More sale shopping and coupon clipping in my future. :)

Decent menu tonight (every single ingredient was on sale!) - cheese enchiladas with either black beans or refried beans on the side, depending on what's in the cupboard. Also going to make a coleslaw of some sort. Head cabbage was super cheap and I have green onions and carrots that need to be used.

I am making enchiladas too, just got back from the store with the ingredients. Now just have to get the gumption up to make them.

Cabbage, carrots, onions and potatoes are on the menu for tomorrow night. Tonight was tamales (not homemade - too tired from driving back and forth into the city) and rice - it was good.

How did your enchiladas turn out? Mine were put on hold because there were other leftovers to use up that I didn't want to go to waste.

You must be so healthy from eating all the fresh veggies and fruit - I am thinking of changing my diet.

I had pain in the joints of my right hand and then my left knee started acting up. I Googled to see if there was anything I could do (apart from taking pain killers)

I ran across this:

Dietary changes may help alleviate or reduce the pain associated with osteoarthritis. Research has shown that foods rich in omega-3 fatty acids and the spices ginger and turmeric may help reduce inflammation. Foods rich in antioxidants – plentifully found in most vegetables and fruit – may help reduce tissue damage from inflammation.

  • Eat oily fish such as salmon, or try another source of omega-3 fatty acids such as walnuts or freshly ground flax seed daily.
  • Regularly use ginger and turmeric. Ginger tea is a good example.
  • Eat generous amounts of organically grown vegetables and fruit every day.


Of course, since it is Taco Tuesday, I might just have to go buy a fish taco

I take ginger all the time and recently bought more turmeric for inflammation. I use flax meal as a substitute for eggs in almost all of the baking I do. You can add flax seeds to yogurt and things like that too. I don't eat fish, but if you eat meat, fish is a great way to get your omega-3s.

Some say that reducing or eliminating gluten can help with inflammation, especially with arthritis. My mom tried that for about 3 months, but didn't find it to help much in that time period. She said that if she would've stuck with it for 6 months or more she might've seen more improvement. But it was too costly to buy all the gluten-free products.

I wish I was healthier! :)
