Don't feel bad ghost19 - I just tried a new recipe called Graham Cracker Toffee

This is what it is supposed to look like

I am afraid to post a picture but mine looks pretty freaky!

The brown sugar and butter mixture started to firm up a bit after I put the pecans in it so when I tried to pour it over the graham crackers it was a bit too thick.

I tried to rescue it by taking the crackers that got pushed to the side and placing them on top, then sort of whacking them with a small kitchen hammer (the kind you use to tenderize meat)

After baking in the oven for 10 minutes it did look a bit better :cool2::icon_eek:

I'm taking a big pan of this to the Pow Wow tonight - I hope it tastes better than it looks!

Another good bar type dessert that I always get raves for are Lemon Iced Ambrosia Bars! Takes a lot of work....but they are so good!

Here's a quick, easy dish. It's breakfast but it's yummy anytime.

Three corn tortillas
2 eggs (beaten)
Vegetable oil
salt to taste
(1 serving)

Tear the corn tortillas into bite size pieces. Heat oil in a skillet and toss the corn tortilla pieces in. Stir until golden brown and add eggs. Salt to taste. Stir until cooked through. Plate and enjoy.

We have ours with ranchera sauce/salsa and the boys like their migas with bacon or sausage on the side.

I might be able to pull that one off and not burn it Sigs. The raccoons may have to fend for themselves tonight!:) And thank you for the kind words ma'am.

Boneless or not - how ever many you desire.
Salt, pepper, garlic powder
Chicken stock or water (if boneless, chix stock is better)
Elbows or rice
Frozen peas!

Lil bit of oil in pan. Salt, pepper and garlic powder the heck of of the chops. Brown them good on both sides on high heat. (cough)

Take turn heat way way down. Add chix stock or water till halfway up the pan. Cover. simmer for at least 30 to 45. min. Keep an eye on the water/stock level. :O_O: Found this to be important. And more salt/pep garlic powder to water if needed. It will reduce.

Poke them with a fork every once in a while to get juicy in. Flip them around. Spoon juice over whenever. So tender. Poke and poke.

Good with the elbows or rice and peas!

Here goes, this one is for you ghost19

Chicken Casserole
Casserole dish with lid and grease the dish so the food doesn't stick.
Rinse 6 chicken thighs under cold water and give them a shake and then put in bottom of casserole dish (all of them flat on the
bottom of the dish). Sprinkle garlic salt over them
Cut up and peel 4 medium/small potatoes into quarters and put on top of the chicken.
Cut in quarters lengthwise 2 large carrots and cut into 4inch spears and put on top of potatoes.
Sprinkle with garlic salt.
Pour one can of undiluted Cream of Chicken soup over everything.
Cover the dish with a lid or tinfoil.
Bake 1 1/2 hours in 350deg oven.
(After cooking an hour poke potatoes/carrots with a fork. When the fork goes through them easily you are ready to eat.)

Pssst My girls never liked carrots, but they love them in this casserole. I sprinkle some black pepper on the layers too.

By the time we are through with you you are going to be one of the best cooks in Arkansas :)

LOL. Sorry but scrapple is not a bargaining chip. And... does morcilla have its own National Day? When it does, then we'll talk. National Scrapple Day is observed annually on November 9th. :)

That sounds really good but a bit complicated...lol
