It's French fries (or chips as they are called over there). Our chips are what you guys call 'crisps' - but anyway it is basically French fries with gravy and cheese curds. It originated in Quebec but now it's all over Canada. When I was in Quebec in the 80s some places even made an "Italian" poutine with tomato meat sauce on the fries instead of gravy but still with the cheese curds.Gravy and cheese - I must google that word Poutine.
