I haven't tried it - just found the picture; here's the recipe

Weight Watchers Taco Casserole

Most delicious taco casserole!


  • 1 lb ground chicken breast or turkey
  • 1/2 diced white onion
  • 1 can whole kernel corn
  • 1 can black beans
  • 1 tbsp taco seasoning
  • 2 tbsp taco sauce
  • 1/4 cup fat free sour cream
  • 1/2 cup fat free shredded cheddar cheese
  • 1 cup diced fresh tomatoes
  • 1/3 cup green onions



  1. Saute meat, beans, onions, taco seasoning, sauce, and corn on medium-high heat until meat is browned (or soy crumbles are thoroughly cooked).
  2. Spoon half your meat mixture into your casserole dish in an even layer, top with a thin layer of sour cream, then sprinkle with some cheese.
  3. Repeat. Cover with cheese.
  4. Some people commenting on the recipe said you could substitute 0% fat Greek yogurt but I think that might be too tangy (don't know why that numbering won't go away).

Ok let’s see if this will work, if not I will have to try something else. It was posted by one of his friends on his Instagram account. I did not go all crazy Annie on him. That’s weird even for me.

I met his wife recently. She is amazing (Gillian). I believe that we both bonded over feeling a bit awkward and out of place at the last Joe Hill signing at a small library in NH.

I'm recovering from surgery #1 and am slowly getting my energy back. Unfortunately, we moved to a hotel about 30 miles away from home yesterday because our puppy is getting spayed down here (at the rescue's vet). Seattle traffic being among the worst in the nation, it would have taken Mr. Blue all day to drive back and forth for the drop off and pick up. I thought it would be a nice change of scenery to help ease my stir-craziness but the hotel smells so strongly of paint, insecticide, and air freshener that I've been suffering a migraine since we checked in yesterday. I've had the windows wide open even though it's pretty cold out. I'm not exactly living my best life right now.
