Good morning everyone! We have a sick child today. The husband is taking him to doctor because I'm so swamped at work. We all had terrible cold over Christmas, I believe his has turned into bronchitis, which so often happens because he has asthma. I didn't know until I had a child with it, that asthma is more than just restricted airway - for my son it's been more of a compromised immune system thing. But he'll be fine and gets a day off school, so he's not too sad. Be good today!

Thanks - I know, we're all fine now, but his cough lingered and lingered and then last night it became constant. It's just how it goes with him. He's my sweet precious little fellow, but somehow now he's 12 and 5'8" which is taller than me for sure. I think he's going to be big.

I can relate to the feeling about "little" guy, I remember the feeling from when my stepson suddenly showed up with a beard... It took some getting used to.

Swedish it maybe comes out this month or next month I am not sure. But If I can't wait I'll buy the Finnish version of it and read it.

Oh geez! No - I'm so not ready for him to sprout facial hair. My girls are a bit, umm, like girls tend to be. But my boy is just the sweetest kid in the world, I want him to be a little (tall) boy for a while longer.

My poor fellow has Strep Throat and Bronchitis - doctor wants him home all week and back at the doctor office Thursday to make sure the bronchitis isn't heading into his lungs. Sheesh - this is how it works with asthma - I feel so bad for my little "big" guy.

Hi everybody! It is 2 a.m. here and I cannot sleep - hmm - maybe I should read Insomnia?

Just thought I would pop in to say good morning and I hope everyone has a good Tuesday! Love and green lights!

Here is a weird recipe I just found:



Woolworth Cheesecake

1 (3oz) package of lemon Jell-0
1 cup boiling water
8 ounces cream cheese
1 cup granulated sugar
5 Tbs lemon juice
1 can Carnation evaporated milk, well chilled
Graham Crackers--crushed

"Dissolve Jell-O in boiling water. Cool until slightly thickened.
Beat cream cheese, sugar and lemon juice with mixer until smooth. Add thickened Jell-O and beat well.
In a separate bowl, beat the Carnation milk until fluffy. Add cream cheese/Jell-O mixture and beat well with mixer.
Line the bottom of a 9x13 pan with crushed graham crackers, reserving some for the topping. Spread filling over the top and sprinkle crushed graham crackers on top.
Chill.




My thoughts: This was a really good dessert. I would make it for company, we liked it very well. Tasted very lemony. BUT--it didn't really taste anything like cheesecake. Even the very first Cheesecake I had at the Woolworth's Luncheonette.

I would rename it "Lemon Fluff" or something. And for lemon lovers who are looking for light (not in calories, but in filling) dessert for a spring get-together, this is it!
It looks like what I had at Woolworth's Luncheonette all those years ago. They were square and sprinkled with graham cracker crumbs on top too. I might make it again and add some more cream cheese, and less evaporated milk and see what happens.

I also added a little melted butter to the crushed graham crackers to help them bind together and I stuck the crust in the freezer while I made the filling."

To me, this sounds like my kind of cheesecake - fluffy and lemony - I might just make this later today, but I have to go buy the cream cheese first!
