Pecan crusted pork chops with a cherry bbq rub, dirty rice and a salad.

king family fan I don't know about egg and avocado - blech.

I made tacos tonight.

I make a really good ham sandwich - that's what we had last night. I chopped the shaved ham into bits and sear it in some melted butter, season a bit with onion powder and garlic powder. Lay some slices of provolone on top and melt it down while it's still in the pan. I toast some sesame seed hoagie buns, put a little Helmans on them. Tear some lettuce small and toss with Italian dressing. Layer the lettuce on the bottom of the bun, then the ham and cheese - so, so good. I served it with Rotel dip and tortillas. Takes about 10 minutes and so good.

I'm trying a new recipe for a soup called Ground Beef and Barley soup.

Ground Beef and Barley Soup Recipe | Taste of Home

Ingredients

  • 1-1/2 pounds ground beef
  • 3 celery ribs, sliced
  • 1 medium onion, chopped
  • 3 cans (10-1/2 ounces each) condensed beef consomme, undiluted
  • 1 can (28 ounces) diced tomatoes, undrained
  • 4 medium carrots, sliced
  • 2 cups water
  • 1 can (10-3/4 ounces) condensed tomato soup, undiluted
  • 1/2 cup medium pearl barley
  • 1 bay leaf




Directions

  • In a Dutch oven, cook the beef, celery and onion over medium heat until the meat is no longer pink; drain. Add the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes or until barley is tender. Discard bay leaf.

1 cup: 168 calories, 5g fat (2g saturated fat), 29mg cholesterol, 452mg sodium, 17g carbohydrate (7g sugars, 4g fiber), 13g protein.


(I used a big can of crushed tomatoes instead of the can of condensed tomato soup).
