We hadn't taken out anything to thaw. I got home a little late, and Grandma was hungry.

I rummaged and found some "spicy chik'n" Boca patties in the freezer. I threw them in a skillet. Chopped up some yellow bell pepper, white onion, and fresh spinach, threw it in. Mixed it with some spices, most notably garlic and lemon pepper, but a few others. As the Bocas cooked and thawed, I started chopping them into pieces.

Got out two wraps and put did a half-moon of each of them with cheese - cheddar for Grandma, pepperjack for me.

When the veggies and Bocas were all cooked up nice, I dumped them over the cheesy half of the wraps, folded them over, threw them on the griddle, and made quesadillas out of them.

Grandma thought they were delicious. Actually, so did I. And except for the cheese and some carbs in the wraps, it was nothing but nutritious. Win.

Cheese is nutritious - it has calcium and protein. And if those were whole wheat wraps, then you would have at least gotten some fibre, carbs or no carbs. Complex carbs won't kill you - pouring sugar down your throat - now that is a different nasty type of carb we should avoid except for special occasions!
Grandma is a lucky gal to have you around to cook!!

Early in the morning, the wife or I headed off to work, one of us will ask what do you want to have for supper? If nothing is immediately on the mind one of us will exclaim good food! And then pause for effect and inspiration. Something usually comes to mind.

Ms. Mod, How is your partner? I've meant to ask several times, remembering at inopportune moments. I forget if you mentioned hip or knee. Hope the healing comes quickly.

Not on vacation yet--two more days to go but am in NYC on business and will be in meetings all day today and travel day tomorrow so in/out on the Board. Thank you for asking--he's doing very well considering that it's only been a week since he's had his hip replaced. By the time I get back I should see even more improvement.

I did not phrase that well. The wraps and cheese certainly had nutrition, and it's a good thing, because we ain't giving up on our cheese. (When I slice off swiss, I say to Grandma, "Praise holy cheeses," and she's sure I'm gonna get hit by lightning.") Just saying that everything else was pretty much all nutrition, whereas the wraps and cheese were pretty nutritious... well, I cooked in olive oil, and I've heard some disturbing things about that lately, so much so that in order to protect myself, I had to turn off the radio. I can't keep up with it all.

Grandma called when she was starting for home, and I started the burritos. It's a good go-to meal. Easy, quick, nutritious, and tasty. Tonight was pretty good. We weren't up for wine, and the cold milk complemented the meal nicely.
Quick story Grandpa - my husband the Scottish chef (is that an oxymoron?) said that most of the taste comes from the fat we put in our food. So silly me - I bought regular ground beef to make one of my recipes recently, rather than extra lean - whoa big mistake.

I have the worst heartburn right now. I took a second 40 mg Pantoloc because I was suffering so much from acid reflux. I just cannot digest that much grease. The scary part is that my mother used to cook like that when we were growing up. (No wonder I have GERD now!)

That is the last time I buy the cheap hamburger - you are not saving any money if you end up in hospital in the end with clogged arteries or a stroke!

Homemade potato salad, summer is here, fer sure fer sure. I deviled some eggs last week, have to get down to my world famous potato salad for the guys.
I am too tired to cook - I just got off work about an hour and a half ago. Maybe it is time to call for the pizza with extra sausage and cheese as a treat. Son is out with girlfriend and it is just me and the two cats here now!

We had goulash (hamburger, onions, garlic, stewed tomatoes,) with noodles and cheese. My son wanted mini sliders, so it all worked out.

Neesy, if you use high fat meat, you can 'rinse it' after cooking. A quick spray of hot water will remove extra fat (tip given to me by a dietician I used to work with at the nursing home).
