We hadn't taken out anything to thaw. I got home a little late, and Grandma was hungry.
I rummaged and found some "spicy chik'n" Boca patties in the freezer. I threw them in a skillet. Chopped up some yellow bell pepper, white onion, and fresh spinach, threw it in. Mixed it with some spices, most notably garlic and lemon pepper, but a few others. As the Bocas cooked and thawed, I started chopping them into pieces.
Got out two wraps and put did a half-moon of each of them with cheese - cheddar for Grandma, pepperjack for me.
When the veggies and Bocas were all cooked up nice, I dumped them over the cheesy half of the wraps, folded them over, threw them on the griddle, and made quesadillas out of them.
Grandma thought they were delicious. Actually, so did I. And except for the cheese and some carbs in the wraps, it was nothing but nutritious. Win.
