Yum - I like my steak very pink, loaded potato - lots of butter - on the steak even, is this just a southern thing or does everyone let butter melt on their steak when it comes off the grill? Bacon, cheese, sour cream. I really like a salad with steak in it - like the Black & Blue salad from O'Charleys - blue cheese in the greens with the steak. Oh yum!

A thick fillet, med rare to med, made over charcoal with pieces of green apple wood. Served with a pile of sautéed onions and mushrooms. Sauce on the side - 50/50 ketchup & A1, dash of Worcestershire sauce, perfet pinch & garlic salt to taste. Homemade Olive Garden salad. Baked red potato with butter, sour cream and chives. Asparagus and corn-on-the-cob. NY deli bread.

( I take my steak dinner seriously :))

Medium rare. Compound butter on top after it comes off the grill - maybe a tomato-chive butter, or garlic-lemon butter.
Potato? Sautéed in duck fat with some onion, or baked, with sour cream and chopped bacon. (The real stuff, not the fake crap.)
A simple salad with a homemade vinaigrette.
Cabernet.
Homemade cinnamon peach ice cream.

I don't eat red meat that often, but when I do, I'm not picky. Anywhere from charred to just-kill-it-already is just fine for me. If pressed, I'd say rare-medium-rare, but really, I'll eat it all.

For the potato, you can scoop the innards out and put butter, cheese, bacon bits, and green onion in the remaining peel, and I'll fold it over and be in hog heaven.

Mayhap this butter on the steak is a Tennessee thing - everyone should give it go - so delicious, yar?
