It's not because I'm part Irish, but while I like Trappist beer and Belgian beer, my favorite is Irish (Guinness).

So while I'm certainly willing to try Trappist cheese, it will have a hard time knocking my favorite out of the #1 spot (Irish whisky cheddar).

Had a raw milk cheddar the other day that was sublime.
