A new recipe for lasagne called "Lazy Day Lasagne" - I do not see what was so lazy about it! I still had to do the layers, shred all the cheese, etc. But it smells very good and will be ready in a few minutes



Did you know that even if the lasagne noodles say you need to cook them first you can still use them in the recipe without cooking?

Just add enough liquidy ingredients and cover with foil!

(I thought I had messed it up when I noticed the lasagne package said to boil them first, but it was too late to take the whole thing apart at that point).

I am having caramel corn (picked out of the giant bag of Cretors cheddar and caramel recently fetched form Costco - you know what I'm talking about, right Frank?), and scoop of vanilla ice cream and yes, a Michelob Ultra because the wine has gone off. Damn it. It was a horrible Monday. Everything went wrong at work. Then I dropped a gallon of milk that burst open, then I dropped the Ogre's creamer and spilled about half of it. I'm going to bed in just a few.

I am having caramel corn (picked out of the giant bag of Cretors cheddar and caramel recently fetched form Costco - you know what I'm talking about, right Frank?), and scoop of vanilla ice cream and yes, a Michelob Ultra because the wine has gone off. Damn it. It was a horrible Monday. Everything went wrong at work. Then I dropped a gallon of milk that burst open, then I dropped the Ogre's creamer and spilled about half of it. I'm going to bed in just a few.

Ended up with Italian sausages (they were on a good sale--lol), salad, and oven-fried potatoes with malt vinegar. Tried a new salad dressing, too--a creamy yogurt vinaigrette. Next time I'll add a little lemon-thyme or sage, but either way it was lovely on a spinach salad with red bell pepper and strawberries without :)

I'm sure we'll shred up the salmon left over from last night and throw it into a salad. It'll be good.

If it's not too much of a fox pass to quote myself.....

So I get home, and Grandma says, "Whatcha want for dinner?"

"I was gonna shred up the leftover salmon with some seasoning and throw it on a salad! Yummy, huh?"

Pause. "Oh, okay."

Our 40 years don't stand for just nuthin'. No salad tonight.

I shredded the salmon and threw in in a griddle with fresh mushrooms slices, some strips of orange bell pepper, a handful of fresh spinach, but all cooked up with barbecue sauce, water, and some spices added. At the same time, started up a three-cheese box of macaroni that we were saving for the grandkids (because we usually don't eat it) in a pot.

It all came out at the same time, and I put the barbecued shredded salmon/veggies blend on a bed of mac 'n' cheese. Used pasta bowls, just to thoroughly confuse the ethnicities.

Grandma was delighted. Said it was delicious. Win.

A fox pass! - that is cute - I had to go look it up and found out it was used in Stephen King's book "Cell" (it has been a while since I read that one).

I used that rice cooked in coconut milk (which turned out fine after all) and made a nice rice pudding (the kind you bake in the oven).

I used three eggs so it is sort of custardy, plus you sprinkle it with cinnamon on top. I threw in half a cup of golden raisins - my son loves it!

Anybody have any ideas for any other good rice dishes? I still have about 2 or so cups left and I am not sure what to do with it tomorrow.

oh yeah p.s. I called hubby up North and even though he has been a chef for many years, he says he has never tried to use coconut milk to cook rice! (Weird eh? especially since he loves to make Indian food)

Um... do you like or make curries? It would be good with that. Oh, I know! How about with grilled or sauteed shrimp and a nice big salad? Add powdered sugar and nuts, roll into balls and chill, and then coat in more sugar, cocoa powder, or chocolate (if you want to be really decadent--lol). Still thinking...

Lobster--which I'm going to have them cook at the store so I don't have to find the big lobster pot that is somewhere in the garage, about a pound of melted butter for dipping, cole slaw, not sure what else at this point but don't have time to make potato salad or blueberry pie which are the traditional side dishes/dessert for us so that may be it. Do you really need anything else? ;-D Can't remember the last time I had lobster but my partner's sister is in town from NV and that had been on her wish list.
