Yes - I sautee some garlic in butter (so many things I cook start out that way) and then add some kielbasa and some light red kidney beans and a little Cajun seasonings. Simmer as long as you can stand it. Serve over rice. I love salmon fried in a little oil on the stove. I'm good at it, too. Much prefer it this way to baked, though I know the main reason is fat content.Salmon. Yum. Not sure how yet. Inspiration will provide.

Cooked up with cherry tomatoes and fresh spinach. On the side, we're having fresh cucumber slices with slices of a aged goat-cheese gouda that's just wonderful. I have a question for you Grandpa - have you tried cooking white Basmati rice in coconut milk? I asked the question in a different thread but so far no responses. Yup - have some pineapple chunks, so I guess I will go for it - thanks!Wow, I appreciate the compliment! But the answer is no. I'm not much of a rice guy. When we had our Japanese foreign exchange student with us for a year, she made wonderful rice, just steamed, very tender. But rice isn't something I do so much. I'm not beyond just grabbing the quick-rice flavored packages off the store shelves.
It's just one try, one night. I'd say, do it! By definition, you don't know if something's going to work out until you try, right? And if it doesn't, you now know better.
However, I'd probably dilute the coconut milk and water to make the rice. If it's good but could be better, you know to increase the concentration next time. If it doesn't work out at all, you know that too. And don't be afraid to throw some spices in there, if you think it goes well with coconut. How about pineapple syrup or chunks for pina colada rice?
