Red beans and rice - it's been simmering for a few hours and the house smells so good. Raining here today (5 times I've mentioned that now!). So no grilling. But that's OK. Summer is almost here.
That is a great idea - I should go make a nice pot of rice and put the chili in there with it - those are the only red beans I have - do you mean red kidney beans?

Yes - I sautee some garlic in butter (so many things I cook start out that way) and then add some kielbasa and some light red kidney beans and a little Cajun seasonings. Simmer as long as you can stand it. Serve over rice. Delish!

I love salmon fried in a little oil on the stove. I'm good at it, too. Much prefer it this way to baked, though I know the main reason is fat content.
In fact, that's what I'm doing, along with (I think I've talked about this before) some squeezed oranges, lemon juice, coconut rum, pineapple chunks, and sprinkled liberally with mango powder spice. Cooked up with cherry tomatoes and fresh spinach. On the side, we're having fresh cucumber slices with slices of a aged goat-cheese gouda that's just wonderful. Chardonnay on the side.

Just finishing it up now. We'll settle in to watch Cosmos. Life will be pretty darn good for a bit. Have a wonderful evening, everyone.

I have a question for you Grandpa - have you tried cooking white Basmati rice in coconut milk? I asked the question in a different thread but so far no responses. I know you like to cook and have lots of experience so I thought I would ask you :umm: :m_pan:

Wow, I appreciate the compliment! But the answer is no. I'm not much of a rice guy. When we had our Japanese foreign exchange student with us for a year, she made wonderful rice, just steamed, very tender. But rice isn't something I do so much. I'm not beyond just grabbing the quick-rice flavored packages off the store shelves.

It's just one try, one night. I'd say, do it! By definition, you don't know if something's going to work out until you try, right? And if it doesn't, you now know better.

However, I'd probably dilute the coconut milk and water to make the rice. If it's good but could be better, you know to increase the concentration next time. If it doesn't work out at all, you know that too. And don't be afraid to throw some spices in there, if you think it goes well with coconut. How about pineapple syrup or chunks for pina colada rice?

Yup - have some pineapple chunks, so I guess I will go for it - thanks!
