We are having marinated london broil and baked potatoes with lots of butter and sour cream. Tomorrow starts the season of fasting so we are celebrating tonight!!
What is London broil?

Tonights offering. Some diced beef and kidney slung in slow cooker this morning, with some beef stock, sliced swede/parsnip/carrot/onion and some dried chipotle chillies. A large glass of red wine slung in too. Having in it a bit later with a mound of buttery mash and some green beans.

From wikipedia -

London broil
is a North American beef dish made by broiling or grilling marinated flank steak, then cutting it across the grain into thin strips. The origin of the name is obscure; the dish is unknown in the English city of London.

Hmmm, to me a London Broil is usually a roast. That sounds more like what Sunny is making to me too.

Do you do meatless on Friday in Lent? I have a lot of great recipes!
Yes I do - bring them on - I do soooo hate to cook on Fridays, so I try to make it to the Lent fish fry at our church, but I can't always drag the kids. So it's usually fish stix and mac & cheese, or grilled cheese and tomato soup - tuna fish; grilled tilapia if I'm in the mood.

Our church does a meatless potluck after stations, so we usually go to that. Most people bring soups, but I also make bean & cheese burritos, mexican lasagna, regular vegetable lasagna, cheese or veggie pizza, black bean & corn tostadas, curries... the possibilities are nearly endless :)

You mentioning the stations of the cross just made me feel so nostalgic for the old church in Toronto - Holy Name Cathedral back in the 60s - sigh

Oh - but what am I eating? Well, I made a pot of KD (Kraft Dinner we call it up here) - I think Americans call it mac and cheese. I put some lovely Velveeta in there. I know - hardly gourmet fare but I am off work today as I feel just drained. Got a canker sore too - yuck (hope I did not spoil anyone's appetite!)

For protein I just had some sockeye salmon from the can but my son does not like that so I will give him something else (still can't decide yet) ????? any ideas?:ill::question_pig:

Chicken tenders or nuggets and a vege. My kid is 14. One of the best things I've done as a parent is give him permission to cook. We have a toaster oven he 'cooks' chicken nuggets, super pretzels, nachos in. It's great. If I am feeling sick, he can get something hot for himself. I have him help me a little in the kitchen, but he doesn't always want to; it is fine. He can make himself eggs.

Thanks - great idea - I can set stuff up for him and he can cook it (I may end up going back to bed later or soak in some bubbles)

Miz Sun, that sounds like a good recipe!! I am always looking for a new crock pot meal. Lemme know if you liked it!!
I found it on one of the sites you told me about....I'm loving finding and trying new ways to cook things.
It was very tasty for a simple meal. The meat cooked up nice and tender. I served it with a wild rice pilaf and baby green peas.
Next time, I'll probably cut the cooking time by about an hour.....It was more well done than I like.
Definitely will make it again.

Watching American cookery programmes, can someone enlighten me as to what is Kosher salt? Is it like what we call sea salt? You know, bigger flakes of salt than table salt?

Tonights snafflings are thin pork steaks I am marinading in smoked paprika, hot paprika and cayenne pepper, honey and lemon juice. I'm going to char grill them quickly, and serve with green beans and jacket potatoes with the potato scooped out, mashed up with chopped onion, cheese, butter and pepper and put back into skins and baked.

Most recipes that call for salt are referring to table salt, which has additives like iodine (to prevent thyroid disease) and an anti-caking agent to prevent lumping in humidity. Many chefs prefer kosher salt (additive-free, coarse-grained) for cooking and sea salt for table use because they have a softer flavor than table salt. Kosher salt is made by compacting granular salt, producing large, irregularly shaped flakes which allows the salt to easily draw blood when applied to butchered meat (koshering process). The structure dissolves easily and provides flavor without oversalting because of it's large surface area.
