This morning I took Andy to his first appointment but now he's gone off on his own for the CT brain.
So I think I will take a stab at this and time it so it will be ready when he gets home.
It looks like you need to use quite a lot of spices
Only difference is I'm using fresh chicken thighs instead of a rotisserie chicken

Does anyone here know how to soften half a block of creamed coconut? Andy put it in the fridge and it's quite hard now.
The recipe doesn't call for it but it's supposed to be good - maybe I will just Google it.

We had spaghetti with chicken and mushrooms in the sauce. Used up the leftover chicken breasts.
Turns out you chop the stuff up with a sharp knife then melt it in the Butter Chicken - it melts quite quickly - thanks for the suggestion! (I bet if you put it under hot water while it was still in the plastic it would melt)maybe run it undeer cool water like thawing meat

That's awesome! Good for you guys!Made the last of the antelope steaks last night. We did very well this year, the meat from the deer and antelope lasted us from October to end of May! I don't think we have ever made it past February or March before. It helps a lot that Evan hunts now too and we can put up more meat. But they were both fortunate this year to get nice, big animals.
I still have a couple packs each of deer burger and antelope sausage left as well.
Ty and Ali are both old enough now to hunt as increase what we can get but we missed out on the hunter safety classes. They only offered 4 and class size around 20. They filled up before I even knew about them! Going to have to keep a better eye out next winter. They have both been taught how to safely handle firearms by their dad but the class is required to get a license. Plus in my view, it never hurts to have these things cemented in the brain by someone other than family. So we will have to wait another year until they can hunt.

I was one of the first people to go through a hunter safety course in Pennsylvania way back in the day. I’m glad I did it, even though it was taught by our crazy chief of police who got a kick out of having 13 & 14 year old kids fire his fully automatic Thompson machine gun and his two pen pistols. I lost my source for venison last year and will need to harvest my own if I want deer jerky, sticks and sausage. I picked up a new .308 recently and think I’ll take the hunter safety course again just for good measure. They offer it online in PA.
